Time 25m

Number Of Ingredients 8

2-3 box (10 oz) chopped frozen spinach, thawed and drained well
1 large onion, chopped or minced
1/4 c butter or margarine
salt and pepper, to taste
1 clove garlic, minced
1 1/2 c shredded cheddar cheese
1 well-beaten egg
1/2 lb danish sansoe or havarti cheese, cut into strips

Steps:

  • 1. Preheat oven to 375 degrees F. Saute onion in butter until soft. Add spinach, garlic, salt and pepper. Cook until mixture is somewhat dry.
  • 2. Spoon half of the spinach mixture into a greased pie pan. Spread the cheddar on top. Cover with the rest of the spinach mixture.
  • 3. Spoon beaten egg over top. Add the strips of cheese. Bake for 25 minutes.

Tips:

  • To ensure even cooking, chop the spinach finely. Use a sharp knife or a food processor to make the job easier.
  • For a creamier filling, use full-fat milk and cream cheese. If you prefer a lighter version, you can use low-fat or non-fat dairy products.
  • Feel free to add other vegetables to the pie, such as chopped mushrooms, zucchini, or bell peppers. You can also add crumbled cooked bacon or sausage for a savory twist.
  • If you don't have a pie plate, you can use a 9x13 inch baking dish. Just be sure to adjust the cooking time accordingly.
  • For a golden brown crust, sprinkle some grated Parmesan cheese on top of the pie before baking.
