1 lb ricotta cheese
1 cup grated mozzarella cheese
3 eggs, slightly beaten
1 (10 ounce) package frozen spinach, thawed and squeezed to remove water
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon dried dill
1/2 teaspoon garlic powder
1/3 cup pepperoni or 1/3 cup ham
1/4 cup onions or 1/4 cup zucchini, in any combination that you prefer
olive oil

Steps:

  • Combine ricotta, mozzarella and eggs, mixing well.
  • Blend in spinach.
  • Add remaining ingredients mixing well.
  • Pour into a buttered 10" springform pan.

8 ounces feta cheese, crumbled
1 (8 ounce) container cottage cheese
½ cup chopped onion
¾ teaspoon poultry seasoning
2 teaspoons chopped fresh dill
¼ teaspoon ground black pepper
salt to taste
2 cups bread crumbs
4 tablespoons butter, melted

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease one 9x13 inch casserole dish.

2-3 box (10 oz) chopped frozen spinach, thawed and drained well
1 large onion, chopped or minced
1/4 c butter or margarine
salt and pepper, to taste
1 clove garlic, minced
1 1/2 c shredded cheddar cheese
1 well-beaten egg
1/2 lb danish sansoe or havarti cheese, cut into strips

Steps:

  • 1. Preheat oven to 375 degrees F. Saute onion in butter until soft. Add spinach, garlic, salt and pepper. Cook until mixture is somewhat dry.
  • 2. Spoon half of the spinach mixture into a greased pie pan. Spread the cheddar on top. Cover with the rest of the spinach mixture.
  • 3. Spoon beaten egg over top. Add the strips of cheese. Bake for 25 minutes.
