6 - 8 large eggs, beaten
1 1/4 c milk
4 green onions, chopped
1/2 tsp garlic powder
1/4 tsp kosher salt or to taste
1/8 tsp black or white pepper or to taste
1 c all-purpose flour
8 oz Polly-o Ricotta (Polly-o is my favorite)
2 Tbsp chopped parsley
1/2 c seeded and diced tomato
1 1/2 c cheddar cheese, shredded reserve 1/2 cup
1/2 c any cooked meats may be added if desired

Steps:

  • 1. In a large bowl beat eggs until they are frothy. Add milk.
  • 2. Add flour and beat.
  • 3. Add salt, pepper, garlic powder, green onions... stir.
  • 4. Add cheddar cheese.
  • 5. Add ricotta and stir to combine.
  • 6. Add chopped parsley; stir.
  • 7. Pour into a (sprayed or well-oiled) 13x9 pan.
  • 8. Sprinkle tomatoes evenly over the top of mixture.
  • 9. Bake at 350* for 45 minutes or until golden yellow. Sprinkle with remaining cheddar cheese the last 5 minutes. Serve.

refrigerated Dough for 1 (9-inch, deep dish pie crust)
7 large eggs (beaten)
2 cups chopped fresh baby spinach (1 1/2 ounces)
2/3 cup skim milk
6 tablespoons grated parmesan
3 tablespoons chopped fresh basil
1/4 teaspoon kosher salt
1/2 cup part skim ricotta
1/3 cup part skim shredded mozzarella
3/4 cups halved grape or cherry tomatoes

Steps:

  • Preheat oven to 350 degrees Farenheit.
  • Roll the dough out on a well-floured work surface until it's approximately 11 to 12-inches in diameter.
  • Transfer it to a 9-inch metal or glass pie dish. Using your fingers, press it firmly into the bottom and sides of the pie plate. Trim off any excess, leaving about 1/2-inch overhanging. Then fold/crimp the overhanging dough.
  • Prick the bottom of the pie crust with the tines of a fork. Transfer the pie crust to your pre-heated oven and bake for 10 to 15 minutes, until par-baked.
  • Meanwhile in a large mixing bowl combine eggs with spinach, milk, 2 tablespoons parmesan cheese, basil and salt; mix well.
  • Pour mixture into the par-baked pie crust.
  • In a small bowl combine ricotta with mozzarella and remaining parmesan.
  • Dollop the ricotta all around and top and place tomatoes around the cheese.
  • Place foil on the edges of the crust to prevent them from burning.
  • Place quiche on cookie sheet and bake on the middle oven rack for 50 to 55 minutes, or until top is browned and a knife inserted in center comes out clean.

1 yellow onion, minced

But if, like me, you sometimes crave what amounts to savory pie filling without the hassle of making an actual crust, this is the way to go. Once you take the crust out of the quiche you not only radically alter the concept but expand its possibilities. You can produce a "quiche" Lorraine by softening onions (lots) in butter or bacon fat, then adding eggs, cooked bacon and cream or half-and-half, and baking it all as you do in the recipe here.

1/2 cup finely chopped onion

1/4 teaspoon pepper, to taste
1/4 teaspoon salt, to taste
1 pinch nutmeg
3 plum tomatoes, seeded and chopped (1 cup)
