Time 50m

Number Of Ingredients 15

6 large eggs
2/3 cup whole milk
¼ cup half-and-half
½ teaspoon kosher salt
¼ teaspoon black pepper
1 teaspoon Dijon mustard (optional)
Pinch ground nutmeg (optional)
1 1/2 cups mix-ins of choice: See below for suggestions and ingredient notes for a broccoli bacon version
2/3 cup grated Gruyère cheese (or swap fontina, sharp cheddar, or smoked mozzarella)
2 tablespoons chopped fresh chives
Cooked (crumbled bacon)
Chopped and sautéed broccoli
Caramelized onions
Cubed leftover ham
Roasted vegetables (roughly chopped)

Steps:

  • Place a rack in the center of your oven and preheat the oven to 350 degrees F. Coat a deep 9-inch pie dish with nonstick spray.
  • Prepare any mix-ins (see recipe notes for a broccoli bacon version and the blog post above for more suggestions).
  • In a large mixing bowl, whisk together the eggs, milk, half-and-half, salt, pepper, mustard, and nutmeg.
  • Scatter the mix-ins evenly across the bottom of the prepared pie dish.
  • Sprinkle the cheese on top.
  • Carefully pour the egg mixture into the dish. Place the dish on a rimmed baking sheet. Sprinkle the chives over the top.
  • Bake the quiche on the baking sheet until the center is set, about 35 minutes. It should look puffed and golden at the edges, and when a thin, sharp knife is inserted in the center, the center should be cooked through without visible liquid. Let cool a few minutes. Cut into big wedges. Enjoy warm.

NEVER-FAIL GLUTEN-FREE PIE CRUST

Never-Fail Gluten-Free Pie Crust image

A gluten-free pie crust using common ingredients. I've adjusted the method over time and have found this final recipe to work every time. It is perfect for both sweet and savory dishes. The trick is leaving large chunks of butter, whole, so they create a flaky crust. The baked crust holds its shape quite well and delivers a nice slice of filled pie beautifully without falling apart.

Number Of Ingredients 6

2 ½ cups gluten-free flour blend
2 tablespoons brown rice flour
1 cup cold butter, cut into 1/2-inch cubes
¼ cup ice cold water
2 cold eggs
½ teaspoon apple cider vinegar

Steps:

  • Place brown rice flour in a resealable plastic bag. Add butter to the bag one cube at a time, shaking to coat each cube evenly with flour. Seal bag and place in the freezer for 15 minutes.
  • Whisk eggs and vinegar together in a small bowl. Place in the refrigerator.
  • Pour gluten-free flour into a large bowl. Cut in butter with your fingers until mixture resembles pebbles with some large lumps of butter remaining. Stir in egg and vinegar mixture. Mix in water one tablespoon at a time until dough is no longer sticky and forms a ball.
  • Wrap dough in plastic wrap; refrigerate until firm, about 30 minutes.
  • Divide dough into 2 pieces and roll out to desired thickness on a lightly floured work surface.

Tips:

  • To make the perfect gluten-free quiche crust, use a combination of almond flour, tapioca flour, and coconut flour. This combination will give you a crispy and flaky crust that holds together well.
  • If you don't have tapioca flour, you can substitute arrowroot flour or potato starch.
  • Be sure to use full-fat coconut milk in the quiche filling. This will give you a rich and creamy texture.
  • Add a variety of vegetables to your quiche, such as bell peppers, zucchini, and spinach. This will make your quiche more nutritious and flavorful.
  • Don't overcook the quiche. The center should still be slightly wobbly when you take it out of the oven.

Conclusion:

This crustless gluten-free Thai massaman curry quiche is a delicious and easy-to-make dish that is perfect for any occasion. It's packed with flavor and nutrients, and it's sure to be a hit with everyone at your table. So next time you're looking for a quick and easy meal, give this quiche a try. You won't be disappointed!
