Tips:

  • Use fresh pineapple for the best flavor. If using canned pineapple, be sure to drain it well and pat it dry before using.
  • Chop the pineapple into small pieces so that it distributes evenly throughout the fruitcake.
  • Use a variety of nuts in your fruitcake. Walnuts, pecans, and almonds are all popular choices.
  • Candied fruits, such as cherries, raisins, and citron, are also a traditional addition to fruitcake.
  • Soak the fruits and nuts in alcohol for at least 24 hours before using. This will help to plump them up and add flavor to the fruitcake.
  • Use a heavy-duty stand mixer to cream the butter and sugar together. This will help to create a light and fluffy batter.
  • Add the eggs one at a time, beating well after each addition.
  • Stir in the dry ingredients until just combined. Overmixing will make the fruitcake tough.
  • Fold in the chopped pineapple, nuts, and fruits.
  • Pour the batter into a greased and floured bundt pan.
  • Bake the fruitcake at 325 degrees Fahrenheit for 60-75 minutes, or until a toothpick inserted into the center comes out clean.
