CREAMY CHEESY SPINACH DIP

Creamy Cheesy Spinach Dip image

This recipe doesn't contain mayo or sour cream like most, so it's very cheesy and very delicious. I'm asked for the recipe every time I make it. For those who don't want a strong cheese like Cheddar, you can replace it with anything you like or even leave it out altogether. I like adding the Cheddar because it adds color and a little more flavor.

HEARTS OF PALM DIP

Hearts of Palm Dip image

This zesty little appetizer is going to have everybody at the party guessing the secret ingredient. It doesn't get that creaminess from avocado, or that crunch from edamame. Give up? It's hearts of palm. The core of the tropical plant is mild and sweet, with a tender bite similar to that of artichoke hearts. No need to mention it's super-healthy. Just set it out with some chips and crudités, and bask in the compliments!

Time 15m

Yield Makes 3 cups

Number Of Ingredients 8

2 cans (14-ounces each) hearts of palm, drained
1/4 cup chopped chives
1/2 cup packed cilantro leaves, plus more for serving
1 teaspoon grated lime zest, plus 2 teaspoons fresh juice
1/3 cup extra-virgin olive oil, plus more for drizzling
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
Plantain chips and crudités, for serving

Steps:

  • Place hearts of palm, chives, cilantro, lime zest and juice, oil, salt, and pepper in a food processor; pulse until combined. Serve, drizzled with more oil, with plantain chips and crudités alongside.

Tips:

  • For the best results, use fresh spinach in this recipe. If you don't have fresh spinach on hand, frozen spinach can also be used. Just be sure to thaw it and squeeze out any excess water before using.
  • To make the dip creamier, use a combination of sour cream, cream cheese, and mayonnaise. You can also use all sour cream or all cream cheese, but the combination of all three ingredients gives the dip the best flavor and texture.
  • If you don't have artichoke hearts on hand, you can use canned hearts of palm instead. They have a similar flavor and texture to artichoke hearts, and they work well in this dip.
  • For a vegetarian version of this dip, omit the bacon. It will still be delicious without it.
  • Serve this dip with your favorite chips, crackers, or vegetables. It's also great as a spread for sandwiches or wraps.

Conclusion:

This Crunchy Spinach Dip with Hearts of Palm is a delicious and easy-to-make appetizer that is perfect for any occasion. It's creamy, cheesy, and packed with flavor. Plus, it's a great way to get your daily dose of vegetables. So next time you're looking for a quick and easy snack or appetizer, give this recipe a try. You won't be disappointed!
