CRUNCHY POTATO BALLS

Cooking is not one of my favorite things to do, so I'm always looking for simple and tasty recipes to feed our growing family (three sons - 8,5 and 7 months). These potato balls make a good snack or appetizer (my two older boys love them with any meal!), and they're a good way to use up leftovers. In fact, I often find myself peeling a few extra potatoes just to make sure there will be leftovers. I've also substituted ground-up hot dogs or sausage for the ham.

Time 1h

Number Of Ingredients 10

2 c cooked mashed potatoes
2 c cooked ham, finely chopped
1 c swiss cheese, shredded
1/2 c ranch dressing
2 eggs, beaten
1/4 c finely chopped onion
1 tsp prepared mustard
1/2 tsp salt
1/4 tsp pepper
3 1/2 c corn flakes, crushed

Steps:

  • 1. Preheat oven to 400 degrees.
  • 2. Combine the potatoes, ham, cheese, salad dressing, eggs, onion, mustard, salt and pepper in a large mixing bowl and mix well.
  • 3. Shape into 1 inch balls and roll in corn flake crumbs.
  • 4. Arrange the balls on a greased baking sheet. Bake for 30 minutes or until brown.

Tips:

  • Use a large potato for the best results. A large potato will yield more potato balls and the balls will be more evenly sized.
  • Boil the potatoes until they are very tender. This will help to ensure that the potato balls are fluffy and light.
  • Mash the potatoes until they are very smooth. Any lumps in the potatoes will make the potato balls tough.
  • Add the seasonings to the potatoes while they are still hot. This will help the seasonings to absorb into the potatoes and give them more flavor.
  • Chill the potato mixture for at least 30 minutes before frying. This will help the potato balls to hold their shape when they are fried.
  • Use a deep fryer or a large saucepan filled with oil to fry the potato balls. The oil should be hot enough to fry the potato balls until they are golden brown and crispy.
  • Drain the potato balls on paper towels to remove any excess oil.
  • Serve the potato balls hot and crispy. They can be enjoyed on their own or with your favorite dipping sauce.

Conclusion:

Crunchy potato balls are a delicious and easy-to-make snack or side dish. They are perfect for any occasion, from a casual get-together to a formal party. With a few simple ingredients and a little bit of time, you can make these delicious potato balls that everyone will love. So what are you waiting for? Give this recipe a try today!
