Time 30m

Yield 4 serving(s)

Number Of Ingredients 9

2/3 cup panko breadcrumbs, bread crumbs
2 tablespoons minced fresh parsley
1 teaspoon grated lemon zest
kosher salt and fresh black pepper
2 tablespoons olive oil
4 (6 -8 ounce) salmon fillets, skin on
2 tablespoons Dijon mustard
2 tablespoons vegetable oil
lemon wedge, for serving

Steps:

  • Preheat oven to 425 degrees.
  • In a small bowl combine the panko, parsley, lemon zest, 1/2 t salt, and 1/2 t pepper. Drizzle with olive oil and stir until crumbs are evenly coated. Set aside.
  • Place salmon, skin side down, on a board. Brush the tops of the fillets with a generous amount of mustard and sprinkle with salt and pepper. Press panko mixture thickly on each fillet. The mustard should help the panko adhere.
  • Heat vegetable oil over medium high heat in a 12 inch cast iron skillet, or a large ovenproof pan. When oil is very hot, add salmon fillets, skin side down, and sear 3 to 4 minutes.
  • Transfer pan to hot oven and cook for 5 to 7 minutes, until salmon is almost cooked and panko is browned. Remove from oven and cover with aluminum foil and allow to rest for 5 to 10 minutes. Serve with lemon wedges.

Time 19m

Yield 2 serving(s)

Number Of Ingredients 12

2 salmon fillets, skinned and de-boned
1 cup panko breadcrumbs
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon paprika
1/4 teaspoon black pepper
1/2 teaspoon salt
1 teaspoon cooking spray
1 egg
1 tablespoon milk
1/4 teaspoon pepper
1/4 teaspoon salt

Steps:

  • Preheat oven to 425°F.
  • Into a shallow, wide bowl, place panko, paprika, garlic powder, onion powder, salt and pepper. Stir until thoroughly combined.
  • In another shallow bowl, whisk egg. Then whisk in milk, salt and pepper.
  • Lightly coat a medium-sized baking pan with cooking spray.
  • Dredge fish in egg mixture, gently shake off excess liquid and drop into panko mixture. Pat mixture onto all sides of the fish and gently place onto baking pan, handling carefully as not to loose the coating.
  • Bake for 8 to 9 minutes.
  • Allow to cool slightly, serve and enjoy!

Tips:

  • Choose the right salmon. Look for a salmon fillet that is about 1 inch thick and has a deep pink or orange color. Avoid fillets that are thin or have a grayish color.
  • Make sure the salmon is fully thawed before cooking. If the salmon is frozen, thaw it in the refrigerator overnight or in a sink full of cold water for about 30 minutes.
  • Pat the salmon dry with paper towels before cooking. This will help the panko crumbs adhere to the salmon.
  • Use a light hand when breading the salmon. Don't press the panko crumbs too hard into the salmon, or they will fall off during cooking.
  • Cook the salmon until it is cooked through. The salmon is cooked through when it flakes easily with a fork. The internal temperature of the salmon should be 145 degrees Fahrenheit.
  • Serve the salmon immediately with your favorite sides. Salmon is delicious with roasted vegetables, rice, or salad.

Conclusion:

Panko-crusted salmon is a delicious and easy-to-make dish that is perfect for a weeknight meal. The panko crumbs give the salmon a crispy coating, while the salmon itself is tender and flaky. This dish is sure to be a hit with your family and friends.
