5 cups old-fashioned oats
1 cup sliced almonds
1/2 cup sunflower kernels
1/2 cup ground flaxseed
1/2 cup packed brown sugar
1/4 cup maple syrup
1/4 cup honey
2 tablespoons canola oil
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1 teaspoon vanilla extract
1/2 cup dried cranberries
1/2 cup dried banana chips
1/2 cup dried apricots, halved

Steps:

  • In a large bowl, combine the oats, almonds, sunflower kernels and flax. In a small saucepan, combine the brown sugar, maple syrup, honey, oil, salt and cinnamon. Cook and stir over medium heat for 2-3 minutes or until brown sugar is dissolved and mixture is heated through. Remove from the heat; stir in vanilla. I tried a bunch of granola recipes and came up with this combination which is by far my favorite. Other nuts and dried fruit can be substituted but the coconut, pecans and dates just work so well together with the maple I just make this one all the time.

4 c instant 1 minute rolled oats
1 c chopped pecans
3/4 c shredded coconut
1/2 c dark brown sugar
1/2 c + 4 tablespoons real maple syrup
1/4 c + 1 tablespoon vegetable oil
1/2 c chopped dates
1/2 c dried cranberries

Steps:

  • 1. Preheat oven to 250 degrees. In a large bowl mix all ingredients well so all they are all evenly coated. Pour on to a large cookie sheet with sides and bake at 250 for 1 hour and 30 minutes.
  • 2. This step is important because it insures the granola is evenly toasted and browned. Stir granola every 15 minutes while it is baking for even color. Cool and store in airtight container. Enjoy!

1 1/2 cup raw nuts and/or seeds (I used 1 cup pecans and 1/2 cup pepitas)
1 teaspoon fine-grain sea salt (if you're using standard table salt, scale back to 3/4 teaspoon)
1/2 teaspoon ground cinnamon
1/2 cup melted coconut oil or olive oil
1/2 cup maple syrup or honey
1 teaspoon vanilla extract
2/3 cup dried fruit, chopped if large (I used dried cranberries)
Totally optional additional mix-ins: 1/2 cup chocolate chips or coconut flakes*

Steps:

  • Preheat oven to 350 degrees Fahrenheit and line a large, rimmed baking sheet with parchment paper.
  • In a large mixing bowl, combine the oats, nuts and/or seeds, salt and cinnamon. Stir to blend.
  • Pour in the oil, maple syrup and/or honey and vanilla. Mix well, until every oat and nut is lightly coated. Pour the granola onto your prepared pan and use a large spoon to spread it in an even layer.
  • Bake until lightly golden, about 21 to 24 minutes, stirring halfway (for extra-clumpy granola, press the stirred granola down with your spatula to create a more even layer). The granola will further crisp up as it cools.
