3/4 cup crushed saltines (about 25 crackers)
2/3 cup all-purpose flour
3/4 teaspoon salt
1/4 teaspoon baking powder
1/4 teaspoon cayenne pepper

4 beef cube steaks (4 ounces each)
3 tablespoons canola oil
GRAVY:
2 tablespoons all-purpose flour
1-1/3 cups milk
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In a shallow bowl, whisk egg and milk. In another shallow bowl, combine the cracker crumbs, flour, salt, baking powder, cayenne and pepper. Dip steaks in egg mixture, then in crumb mixture., In a large skillet, cook steaks in oil over medium heat for 3-4 minutes on each side or until no longer pink. Remove and keep warm., For gravy, stir flour into the pan until blended. Gradually add milk, stirring to loosen browned bits from pan. Bring to a boil; cook and stir 2 minutes or until thickened. 1/4 teaspoon salt
1/4 teaspoon garlic pepper
2 tablespoons vegetable oil
1 medium onion, sliced
3/4 cup 50%-less-sodium beef broth
2 teaspoons cornstarch
2 tablespoons chopped fresh parsley, if desired

Steps:

  • In shallow dish, mix egg product and garlic. In another shallow dish, place cracker crumbs. Sprinkle both sides of beef steaks with salt and garlic pepper. Dip both sides of each steak into egg product mixture, then coat with cracker crumbs.

1 tablespoon all-purpose flour
1 (1 ounce) envelope dry onion soup mix
2 cups water, or as needed
