Time 45m

Yield 4

Number Of Ingredients 9

4 walleye fillets
2 eggs, beaten
½ cup all-purpose flour
½ teaspoon garlic powder
1 pinch salt
½ teaspoon ground black pepper
2 cups crushed saltine crackers
vegetable oil for frying
1 lemon, cut into wedges

Steps:

  • Check the fillets to ensure all bones and skin have been removed. Cut the fillets into manageable pieces, if necessary.
  • Place the beaten eggs a bowl and set aside. Combine the flour, garlic powder, salt, and pepper in another bowl. Pour the cracker crumbs into a third bowl.
  • Heat the oil in a deep-fryer or large cast-iron skillet over medium-high heat to 375 degrees F (190 degrees C).
  • Dip the fillets into the flour mixture, then the eggs, and then the cracker crumbs and set fillets aside on a plate. Test the oil: it will crackle and pop when a cracker crumb is dropped into it. Carefully lower 2 fillets into the hot oil. Cook until browned, about 3 minutes per side, using tongs to turn the fillets. Transfer to a paper towel-lined plate and repeat with remaining fillets. Serve with fresh lemon wedges.

Tips:

  • Use fresh walleye fillets. Fresh walleye fillets will have a firm texture and a mild flavor. Avoid fillets that are slimy or have a strong odor.
  • Rinse the walleye fillets and pat them dry. This will help the breading adhere to the fish.
  • Use a light touch when dredging the walleye fillets in the flour mixture. You don't want to over-coat the fish, or the breading will be too thick and heavy.
  • Let the coated walleye fillets rest for a few minutes before frying. This will help the breading set and prevent it from falling off the fish when you fry it.
  • Fry the walleye fillets in hot oil. The oil should be hot enough to sizzle when the fish is added. This will help the fish cook quickly and evenly.
  • Don't overcrowd the pan. If you overcrowd the pan, the fish will not cook evenly and the breading will become soggy.
  • Cook the walleye fillets until they are golden brown and flaky. The fish should be cooked through, but not overcooked.
  • Serve the walleye fillets immediately with your favorite sides. Some popular sides include tartar sauce, lemon wedges, and coleslaw.

Conclusion:

Crunchy-coated walleye is a delicious and easy-to-make dish that is perfect for a weeknight meal or a special occasion. The walleye fillets are coated in a crispy breading and then fried until golden brown. The result is a fish that is flaky and tender on the inside and crispy on the outside. Serve the walleye fillets with your favorite sides and enjoy!
