2 lbs boneless chicken
1 tsp salt (to taste)
1 tbsp light olive oil (for frying)
1 large onion
2 medium tomatoes
12 oz cream cheese (softened at room temperature)
10 raw tortillas

Steps:

  • Slice the chicken into 2-inch pieces.
  • Preheat a skillet with a little bit of olive oil over medium-heat. Add the chicken into the skillet. Season it with some salt and sauté it until fully-cooked.
  • Dice the tomatoes and onions into small pieces. Add the onions into the skillet and sauté them until they begin to soften and turn translucent. Next, add in the tomatoes and sauté the chicken for another 5 minutes. Remove the skillet from heat and let the chicken cool at room temperature.

6 flour tortillas (12")
1 jar salsa (16 ounces)
2 cups monterey jack cheese (shredded, divided)
1 rotisserie chicken (small)
2 cans green chilies (diced, 4 ounces)
1 can fire-roasted tomatoes (diced, 24 ounces, or canned tomatoes with green chiles)
1 chipotle chili in adobo sauce (seeded and minced)
1 tablespoon chili powder
2 teaspoons ground cumin
1 teaspoon crushed red pepper flakes
½ teaspoon kosher salt
1 teaspoon oregano

Steps:

  • Preheat oven to 400°F and spray a 9x13" casserole with non-stick spray, set aside.
  • Remove skin from chicken and pick the meat off in bite-size pieces. Place into a bowl.
  • Set a 12" skillet over medium heat, add burrito filling ingredients. Stir to combine.
  • Cook the burrito filling mixture until it's warm, about 5 minutes.
  • Add in the chicken and stir to combine. If there is a lot of moisture in the skillet keep cooking over medium just until the water cooks off.

  • Roll them up burrito style and set them seam side down in the prepared casserole dish. Spoon the salsa over the burritos and top with remaining shredded cheese.

1 teaspoon garlic powder

water, mixed to a paste to seal burritos

Steps:

  • Mix first 6 ingredients well & set aside. Mix flour & water until it is pasty but not dry. Put about 1/3 cup chichen mix into each tortilla roll tightly, Put paste on the bottom flap of tortilla and place flap side down for about 10 min so it will stay sealed. I like to cut them in half & fry at 350 until golden brown.
  • These are good with salsa or sweet & sour sauce.

1 tbsp vegetable oil
1 onion , diced
1 tbsp chipotle paste
250g cooked chicken , chopped into small chunks
2 x 250g pack ready-cooked rice
400g can red kidney beans
1 lime , juiced
small bunch coriander , chopped
1 ripe avocado , chopped
6 large wraps
6 tbsp tomato salsa
100g grated cheddar
6 tbsp soured cream (optional)

Steps:

  • Heat the oil in a frying pan and gently fry the onion until soft, about 10 minutes. Stir in the chipotle paste and the chicken to warm through.
  • Heat the rice following pack instructions and warm through the kidney beans in their liquid in a small pan. Drain the beans and fold in the cooked rice, with half the lime juice and half the coriander.
