1 1/2 pounds chicken gizzards
1 egg
1 cup milk (plus two tablespoons for mixing with egg)
1 cups all-purpose flour
2 teaspoons table salt
1 teaspoon ground black pepper
1 teaspoon paprika
3/4 teaspoon garlic powder
3/4 teaspoon onion powder
1/2 teaspoon cayenne pepper
1/4 teaspoon ground sage
oil for frying

Steps:

  • Clean the chicken gizzards as needed.
  • Heat a large pot of water on the stovetop to a simmer and add the gizzards. Simmer for one hour to tenderize them, using enough water to cover the chicken.
  • Remove chicken from the water and cool in the refrigerator while soaking in one cup of milk.*
  • Once cooled, set up your dredging station by mixing the flour and seasonings in a large dish, and beat one egg with two tablespoons of milk in a separate dish.

For marinade:
1 pound chicken gizzards
1 small onion, chopped coarsely
approximately 1 1/2 cups buttermilk
For frying:
1 1/2 to 2 quarts oil
1 cup all-purpose flour
2 teaspoons salt, or to taste
1 teaspoon cayenne pepper, or to taste
1 egg, beaten
For stewing:
1 pound chicken gizzards
3 cloves garlic
1 small onion, halved
1 small carrot
1 bay leaf
Herbs of your choice, such as thyme and majoram
For frying:
1 1/2 to 2 quarts oil
1 cup all-purpose flour
2 teaspoons salt, or to taste
1 teaspoon cayenne pepper, or to taste
1 egg, beaten

Steps:

  • Place the gizzards in a bowl with the onions and pour enough buttermilk into the bowl to cover the contents entirely. Refrigerate the gizzards for 8 hours, or preferably for 24 hours. The gizzards will hold in the buttermilk for up to 2 days.
  • When you are ready to fry, remove the gizzards from the buttermilk and drain them in a colander. They do not have to be impeccably dry, just drained of the excess buttermilk. Cut the gizzards into 1/4-inch to 1/2-inch chunks, working around and discarding any excess sinew or tendon.
  • Mix the flour with the salt, cayenne pepper, and seasonings. Have the beaten egg ready.
  • To fry: Heat the oil to 350°F. When ready to fry, dip each piece of gizzard in the egg, and then dredge well in the flour. The gizzards must be coated very well or else the batter will not be crisp.
  • Slip the gizzards into the hot oil and fry for 2 to 3 minutes, until golden brown and crisp. Drain over a rack to get rid of the excess oil. Serve immediately, accompanied by grits and collards for the full Southern experience.

I live in Singapore and one of our most famous dishes is our Chicken Rice. Sometimes, gizzard is available as a sideorder. I have usually been disappointed with the flavour. This recipe is my own version, and a tasy way (my family agrees) to use often discarded chicken parts. Excellent as an appetizer.

1 (200 g) package chicken gizzards (or any other poultry gizzards)
1 teaspoon shredded young ginger
3 cloves garlic, coarse chopped
1 tablespoon black vinegar or 1 tablespoon balsamic vinegar
2 tablespoons sweet soy sauce or 2 tablespoons ketjap manis (molasses-like consistency)
pepper
1 teaspoon Chinese five spice powder (see note below)
300 ml water
1 tablespoon cooking oil (canola)

Steps:

  • Clean gizzards thoroughly, cut off tough tendon bits.
  • Dry marinate with a little pepper.
  • In a small sauce pan, heat the cooking oil on medium heat.
  • Add ginger and garlic, stir fry till fragrant.
  • Throw in the gizzards and increase heat to hot, stir fry till the gizzards just chnge color.
  • Add in the 300 ml water, the five spice powder, the sweet soy sauce, and vinegar.
  • Mix well.
  • Bring to a boil.
  • Reduce heat to a simmer and cook till the sauce reduces to about a third.
  • Taste, adjust if necessary.
  • Check that gizzards are tender yet crunchy.
  • Serve hot, warm or cold with gizzards skewered with toothpicks.
  • Note You can make your own Chinese Five Spice Powder by blending the following ground spices: 1 2/3 tbsp star anise 1 1/2 tsp fennel seeds 1 1/2 tsp cassia (in the USA cinnamon denotes both cinnamon and cassia which is native to China, professional bakers prefer cassia to cinnamon.) 1/2 tsp Sichuan pepper or black pepper 1/4 tsp cloves Stir-fried vegetables are enhanced by sprinkling about 1 tsp over them during cooking.
  • Add a little salt, and you have a very good marinade for chicken, duck, pork and seafood.

1 -2 lb chicken gizzard (rinsed)
1 -2 cup flour (divided)
2 liters Coca-Cola
3 eggs
1/2 cup real butter
1 -2 teaspoon of multi spice seasoning (I prefer Mortons Natures Seasons for this)

Steps:

  • Bring 2 liters of Coca-Cola to a rolling boil in a large stockpot.
  • Place rinsed gizzards in boiling pot.
  • Bring back to a rolling boil, reduce heat to steady simmer for 35 to 45 minutes.
  • Remove gizzards and drain.
  • Allow to cool for at least 30 minutes. The cooler the better.
  • In the divided flour, mix the seasoning in one half (leaving the other half plain). Beat the eggs well-- place the butter in a medium-large skillet and heat until hot, while not burning.
  • Take cooled gizzards, dredge in flour,egg, then seasoned flour.
  • THIS IS THE VERY IMPORTANT PART!
  • FLOUR-- EGG-- SEASONED FLOUR-- IN THAT ORDER!
  • Place the gizzards in the fry pan and cook for about 2-3 minutes per side, turning occasionally. Remove when golden brown.

½ cup all-purpose flour
1 ½ tablespoons seasoned salt
1 ½ teaspoons ground black pepper

2 cups vegetable oil for frying

  • Trim excess fat and gristle from chicken gizzards. Rinse under cold running water.
  • Place gizzards in a pot of cold water. Bring water and gizzards to a rolling boil; continue to boil for about 15 minutes. Strain gizzards using a colander. Allow to cool.

2 stalks celery, cut into chunks
1 onion, cut into chunks
2 bay leaves
1 ½ teaspoons celery salt, divided

1 teaspoon garlic powder
¼ teaspoon ground cumin

1 cup thinly sliced onion
1/2 cup thinly sliced carrot
1/2 cup thinly sliced celery

6 boneless skinless chicken breast halves (4 ounces each)
1 cup chardonnay or other dry white wine or reduced-sodium chicken broth
1-1/3 cups reduced-sodium chicken broth
1 tablespoon minced fresh parsley
1 teaspoon salt
1 teaspoon dried thyme
1/8 teaspoon white pepper
1 bay leaf
3 tablespoons all-purpose flour
1/2 cup fat-free evaporated milk
1/2 pound fresh mushrooms, quartered

  • In a Dutch oven or large kettle, bring 6 cups water to a boil. Add pearl onions; boil for 3 minutes. Drain and rinse in cold water; peel and set aside.
