1/2 cup corn flake crumbs

  • 2.Spray a 9x9 inch baking dish with vegetable oil spray.

24 ritz crackers, crushed into coarse crumbs (1 cup) could use panko
2 tablespoons minced fresh dill or 2 teaspoons dried
1/4 cup mayonnaise
1 tablespoon Dijon Mustard
1 tablespoon fresh lemon juice
2 tablespoons butter
dash of hot sauce
4 skinless white filets
salt and pepper
lemon wedges

Steps:

  • Preheat oven to 450. Move oven rack to middle position. Toss crumbs with 1 tablespoon of the dill. In a separate bowl, mix the remaining 1 tablespoon dill, the mayonnaise, mustard and lemon juice together. Pat the fish dry with paper towels, then season with salt and pepper. Butter a baking dish.
