MUSSELS, CLAMS AND SHRIMP IN SPICY BROTH
I found this recipe by Giada De Laurentiis on foodtv.com. I have never made mussels or clams and I was delighted with the results. Do not omit the basil, I think it adds a lot to this recipe and make sure you have the warm, crusty bread to dip in the broth!

Tips:
- Use fresh seafood: The fresher the seafood, the better the crostini will taste. If you can, buy live clams and mussels and shuck them yourself just before cooking.
- Don't overcook the seafood: Seafood cooks quickly, so be careful not to overcook it. Overcooked seafood will be tough and rubbery.
- Use a flavorful white wine: The white wine used in the recipe should be flavorful and have a good acidity. A good option is a Sauvignon Blanc or Pinot Grigio.
- Toast the bread until it's golden brown: The crostini should be toasted until it's golden brown and crispy. This will help it hold up to the weight of the seafood and sauce.
- Serve the crostini immediately: The crostini are best served immediately after they're made. This will ensure that the bread is still crispy and the seafood is still warm.
Conclusion:
Crostini of clams, mussels, and shrimp is a delicious and elegant appetizer that's perfect for any occasion. It's easy to make and can be tailored to your own taste preferences. With a few simple tips, you can make sure your crostini are perfect every time.
