I have based this recipe on one that I've used from here several times, Recipe#57130 posted by kcdelong. Even though the original was very good,sometimes you can't help but adding your own special tweaks.:)As usual with any of my recipes,please feel free to change any of the seasonings to your own personal tastes.If you like you can add a 1 pound bag of baby carrots before you add the roast.The time that's listed is based upon my crockpot,so adjust cooking times according to yours.If you would like more color,just slightly brown each side of the roast in a small amount of vegetable oil.Posted to Food.com (a.k.a." 3 lbs chuck roast (or use your favorite cut )
1 teaspoon seasoning salt
1 teaspoon garlic powder
1 teaspoon ground oregano
1 teaspoon ground black pepper
1 1/2 ounces boxed onion soup mix (use just ONE envelope )
1 (10 3/4 ounce) can condensed golden mushroom soup
4 tablespoons butter or 4 tablespoons margarine
4 tablespoons flour
1 cup of liquid from roast
1/2 cup water

Steps:

  • In a small bowl mix together seasoned salt,garlic powder,oregano,and onion soup mix.
  • Rub mixture into all sides of roast,place into a 4 quart crockpot.
  • Spread golden mushroom soup over roast and cook on low for 7 hours.
  • For the gravy,melt the butter in a medium sized saucepan add the flour and make a paste.
  • Add the roast liquid a little at a time while stirring,if the gravy is too thick and water until desired consistency is reached.

MEXICAN PORK ROAST &/OR CROCKPOT CARNITAS

I was fed this (or something like it) by a fantastic Mexican lady a few months ago. I tried to piece together the recipe based on what she told me (in Spanish) was in it- but she gave me no amounts and no specific directions. My kind of cooking! All the ingredients can be adjusted, to taste. You can marinate this and cook it as a roast, or you can cook it in the crockpot with the marinade. If you start out as a roast, you can just throw leftovers in the crock for carnitas the next day (or freeze it and Crock it weeks later!).

1 pork shoulder, bone-in roast, 3-10 lbs
2 cups orange juice
1/2 cup milk
1 1/2 cups chicken stock (for basting) or 1 1/2 cups beef stock (for basting)
1 teaspoon adobo seasoning (Goya or something similar)
5 -6 garlic cloves (chopped, minced, or jarred)
1 tablespoon red pepper flakes
3 bay leaves
2 tablespoons cumin
1 teaspoon steak seasoning
1 tablespoon salt
1 tablespoon oregano
2 jalapenos, sliced

Steps:

  • If preparing as a roast:.
  • Place roast in a bowl large enough to hold it plus several cups of liquid (marinade).
  • Grind/blend together all ingredients (except jalapenos and pork) in a blender, immersion blender, mini chopper, or food processor. When mixed and well-blended, pour over pork. The marinade should almost cover the pork- if it doesn't, add more OJ and milk until it's almost covered.
  • Cover and marinate the pork in the fridge for 12-24 hours. Turn every few hours.
  • When ready to cook the piggy, preheat oven to 400 degrees.
  • Place pork in a greased (or PAM'd) roasting pan (I sometimes use a roasting rack inside a pan) with the fatty side UP.
  • Bake pork at 400 until the top gets crispy and brown.
  • Once the top has browned, cover the roast with foil and place back in the oven. Depending on how you like to cook your meat, you could lower the temp slightly for a longer cooking time.
  • Baste the roast every 30 minutes or so to help infuse it with deliciousness (optional).
  • Cooking time will vary widely depending on the size of your roast. I usually get a 10-lb roast, which takes 2-3 hours usually to cook.
  • Once your roast is at your ideal temp (145*-160*), take from the oven.
  • If you'd like to serve it as a roast now, let it rest for 15 or 20 minutes and then slice it. It will be fairly tender but should hold together well for slicing.
  • Leftovers freeze well! Just throw any leftovers (including the bone) into the crockpot on low with a few sliced jalapenos, shred with 2 forks, and you'll have carnitas! I serve my carnitas with pan-fried corn tortillas, chopped red onion, cilantro, and a lime wedge.
  • ***If you're planning on starting this in the crockpot for Carnitas, you will not need to add the whole amount of liquids. This roast is very fatty and will create a lot of its own juice. Pour the marinade in to the crock, leaving 3 or 4 inches clear at the top. Add sliced jalapenos (if desired). Cover and cook on low for 6-8 hours until cooked and falling apart. Shred with 2 forks, throw the bone away, and enjoy!***.

1 (3 1/2-4 1/2 lb) beef 7-bone roast
1/4 cup flour
salt
pepper
2 tablespoons olive oil
1 cup Coca-Cola (no diet and no pepsi)
1 cup tomato sauce
1 cup beef broth (low salt)
1 (1 1/4 ounce) package dry onion soup mix
1 tablespoon sweet paprika
2 teaspoons dried oregano
1 tablespoon minced garlic
1 bay leaf
1/2 teaspoon black pepper (you can add more pepper at the end of cooking)
1 lb red potatoes (I like the small ones, skins on)
1/2 lb carrot, peeled and cut in 2-inch pieces (thick carrots I cut lengthwise too. You want all the carrots to cook evenly at the same time, so mak)
2 parsnips, peeled and cut in 2-inch pieces (cut the same as the carrots)
1 large onion, rough chopped (not too small of pieces or they will fall apart)
8 ounces cremini mushrooms (white or button can be substituted, leave them whole or larger ones you can cut in half)
1/3 cup fresh parsley, fine chopped (added at the end of cooking)

Steps:

  • Roast -- This to me is an important step. Season the meat well with a mix of the flour, salt and pepper. Rub it in well on all sides of the meat. Then in a large pan add the oil and heat to medium high. Sear the meat on all sides until you get a nice crust and it begins to brown. Just a minute per side is all you need. This really helps the flavor in this dish. Then add your meat to the crock pot.
  • Crockpot -- Add all the vegetables around your roast. I like to put the carrots, parsnips towards the bottom, then the potatoes and mushrooms, and last, add the onions over the top of the roast.
  • Sauce -- Mix everything together in a small bowl and pour over the meat and vegetables. Turn your crockpot on low and cook 6-8 hours. Mine was tender in 6, but it really depends on whether you have a round or oval pot, and the newer models tend to cook a bit hotter. So, you know your crockpot best. Before serving, check if you want to add any additional pepper and add in the fresh parsley.
  • Serve -- Remove the roast and vegetables and make sure to let the roast set 15 minutes before slicing. Serve with the gravy on the side. ENJOY!

Very simple crockpot pork roast in a sweet gravy. When I made this roast I left out the cloves as cloves can become so strong. Also I thought I had cranberry juice but it turned out I had apple/raspberry juice so I used that instead. I didn't thicken the sauce on the stove from a time factor, so I added the cornstarch paste after 4 hours of cooking and cooked the roast for 8 hours. 16 ounces jellied cranberry sauce
1 teaspoon dry mustard
1/4 teaspoon ground cloves
1/2 cup sugar
1/2 cup cranberry juice

2 tablespoons cold water
salt, to taste

Steps:

  • Place pork roast in a slow cooker.
  • Mash cranberry sauce; stir in sugar, cranberry juice, mustard and cloves in a bowl. Pour over meat.
  • Cover and cook on low for 6-8 hours or until meat is tender. Remove roast and keep warm.
  • Skim fat from juices, measure 2 cups, adding water if necessary, and pour into a saucepan. Bring to a boil over medium-high heat. Combine the cornstarch and cold water to make a paste; stir into gravy. Cook and stir until thickened. Season with salt.

  • 1. NOTE: I used a 6 quart HAMILTON BEACH STAY OR GO Crockpot, and it held my complete recipe. Although I cooked this roast on HIGH and It was ready in 5 hours, you may want to cook it on LOW FOR 8 OR 9 HOURS or longer. THIS CROCKPOT HAS A WARMING FEATURE AND WILL KEEP THE FOOD WARM FOR A LEAST 14 ADDITONAL HOURS AFTER COOKING. This is my favorite crockpot of all the ones that I have, I use this one the most. It was a gift from my daughter Briana in 2009.
  • 2. I prefer to cut this cut of meat into serving size portions before COOKING for easier serving.
  • 3. Season meat with desired spices and allow to marinate if time permits for an extra boost of flavor, at least an hour or two. I prefer to bring my roast to room temperature before cooking.
  • 4. Dredge roast in flour and remember to coat all sides of the meat. Reserve the remaining flour to add to crock pot.
  • 5. These are the main ingredients starring in this recipe.
  • 6. Prep the veggies for the roast.
  • 7. Line the bottom of the crock pot with the vegetables. Then add in the meat portions, onion soup mix, brown sugar, remaining flour, and beer.
  • 8. NOTE: I DID STIR THE MEAT AFTER 3 HOURS OF COOKING, BUT IT IS NOT NECCESSARY. THIS IS WHAT THE MEAT & VEGGIES LOOKED LIKE AT THAT TIME.
  • 9. Close lid and use directions with your crockpot to cook roast until done. If you are not in a big hurry you may choose the low setting for cooking to cook for a longer period of time. I needed 5 hours on high and my roast was done and the vegetables were tender.

6 oz tomato sauce
12 oz stout beer such as guinness
2 tsp rosemary, ground
1 tsp thyme, dried

  • 1. Spray crockpot with non stick spray. Mix all ingredients together in a bowl, except meat and gravy mix.
  • 2. Put one half cup of mixture into the bottom of the crockpot.Place the meat on top of this and pout the rest of the mixture over the top.

1 c sweetened dried cranberries
1 tsp black pepper
1 tsp cloves........optional
1/4-1/2 tsp sugar........white or brown

1/2 c chicken broth.. 100% fat free canned chicken broth with 33% less salt
2 Tbsp corn starch

Steps:

  • 1. Plug in crockpot. Turn on high...to heat. Rinse and trim pork of fat. Get ready to steel yourself...for a culinary experience!
  • 2. Combine them beautiful red dried cranberrie babies,the chicken broth and cranberry juice cocktail into a small bowl. Mix well. If you want to add a bit of sweetness, throw in a few raisens. NOTE:Left over cranberry juice goes very well over ice cubes in a tall glass. Adding vodka...is your option! Grandma always said... "WASTE NOT..WANT NOT"..........tee hee

1 cup all-purpose flour

One pkg beef gravy packet
One pkg dry onion soup packet ( about two cups water to mix sauce together)
Two c applesauce
1 bottle fresh carrots
6-8 potatoes cut in quarters ( i like red or yukon golds)
2 stalks celery chopped or slices thin
kosher salt and black pepper to taste
corn starch mixed in water to thicken gravy

Steps:

  • 1. I prefer to always brown beef in my crockpot recipes Brown roast all sides in a little olive oil and butter for best flavor
  • 2. Mix packets and applesauce together Add one cup of water to mix well
  • 3. Place roast in crockpot Cover it with sauce
  • 4. If cooking longer add vegetables later so they won't disappear into the gravy

I have done this same recipe in the 350° oven for 4 hrs. (turning meat over once through cooking) and add the vegetables the last 2 hrs. of baking time , its just as great that way...

3+ lb beef chuck roast ( or your favorite roast)
1 pkg dry onion soup mix
2 c water
1 1/2 tsp garlic powder
1 tsp sea salt
1/2 tsp ground pepper
2-4 medium whole onions
6-8 medium potatoes (or amount needed per person)
2 c baby carrots (or amount needed per person)

Steps:

  • 1. Place a thawed beef chuck roast into a 4qt. slow cooker and season both sides of the roast with garlic powder and salt & pepper.; Mix the water with the pkg. of dry onion soup mix and pour over top of the roast.
  • 2. Place peeled potatoes , whole peeled onions and carrots on top and around the roast. Season the vegetables with salt & pepper if desired.
  • 3. Cover the crock-pot with the lid and cook on low temp. for 8 hrs. Note : After the dinner is done before serving you can make a gravy with the juice if desired.
  • 4. For perfectly smooth gravy add flour to a jar w/lid containing at least one to 1-1/2 cups of water. How much flour? About two tablespoons per cup of gravy desired. Shake up the jar until the flour becomes part of the liquid. Pour the flour/liquid mixture into the hot pan of juices ( I like to pour mine through a fine mesh sieve ) and cook as usual on stove top, stirring constantly. Season ( I like to add 1 tsp. of kitchen bouquet for coloring and flavor)and stir to keep the gravy moving. Bring to a slow boil and cook at least three minutes until gravy is thickened. Deliciously smooth gravy!
  • 5. You can also make the gravy with corn starch. Mix a couple tablespoons with 1/4 cup of water, and then add it to the boiling juice. You will need more or less depending on how much liquid you are thickening -- make a little more than you think you need, and add it to your sauce, stirring constantly. Keep adding the cornstarch mixture until it's "almost but not quite" as thick as you want. It will thicken a little more while it cools.

1 1/2 lb country style boneless pork ribs( see in my description for an alternate meat )
1 c all purpose flour
1 tsp seasoned salt (like lawry's, generic works well also )
1 tsp ground black pepper
1/8 c bacon grease
GRAVY INGREDIENTS
1 10 3/4 can of campbell's golden mushroom soup
1 package onion soup mix ( i use generic )
1 tsp oregano, dried

Steps:

  • 1. In a medium sized bowl combine all gravy ingredients and set aside.
  • 2. In a large gallon sized plastic bag,add flour,pepper,and seasoned salt.Shake well to combine all ingredients.
  • 3. Place meat into seasoned flour and shake well to coat meat.
  • 4. Heat grease until hot but not smoking,cook meat on all sides until lightly browned.( remember you don't want to cook the meat all the way through)
  • 5. Put half of meat into crockpot,and cover with half of the gravy mixture.Top with remaining meat and gravy.
  • 6. Cook for 6 hours.

Of course it was the name which attracted me to this recipe. That, plus the fact that I had a nice pork butt in the refrigerator. I want to tell you this recipe turned out divinely. I had it for a dinner with mashed potatoes (could also use noodles) to sop up the gravy. I also shredded some of the pork for a lovely warm pork sandwich. This recipe was posted on TOH by Qagal. Besides pork butt you can use pork shoulder in this recipe. Do not use pork loin however; it is too lean and the flavor is just not the same.

1 pork roast, 3-4 pounds
1 teaspoon salt
fresh black pepper
1/2 teaspoon garlic powder
2 large onions, quartered
3 (1 ounce) envelopes pork gravy mix
2 1/4 cups water

Steps:

  • Rinse the roast and pat dry with paper towels. Combine salt, pepper, and garlic powder and rub onto the roast. Place roast in a 3-1/2 to 4-quart crockpot.
  • Add the quartered onions over the top of the roast.
  • Prepare the pork gravy, using the 2-1/4 cups water, according to package directions. Pour the gravy over the roast and onions.
  • Cover and cook on LO heat for 8-10 hours. Taste for seasoning and adjust for taste if necessary.

In love with these organic blueberries from the farmers market. Took my sweet and sour recipe and change it up a bit making it more of a sweet and savory dish using these blueberries and his blueberry jam I purchased. Sounds a bit strange but turned out well. Enjoyed very much by my family!

1 2 pound pork tenderloin
2 Tbsp mccormick seasoning (mesquite)
1 large sliced onion
1 c blueberries, fresh
3 Tbsp blueberry preserves
1/2 c ketchup
3 Tbsp brown sugar
3 Tbsp soy sauce, light
1 1/2 c water

Steps:

  • 1. Massage mcCormick seasoning into pork for a few minutes. Slice and place onion on bottom of crockpot.
  • 2. Place pork on top of sliced onion in crockpot. Pour blueberries over.
  • 3. In seperate bowl wisk together rest of ingredients. Pour over pork. Cover and slow cook on low for 6-8hrs. Remove and cover with foil and let rest for 5-10min before slicing. Pour sweet au jus over pork.

2-1/2 to 3 lb pork butt roast
2 sprig(s) fresh rosemary
2 sprig(s) fresh thyme
2 sprig(s) fresh cilantro
1/4 c dijon or spicy brown mustard
2 Tbsp olive oil
1 tsp garlic powder
2 tsp coarse sea or kosher salt
1 tsp ground black pepper
1/8 c honey
1 c coarse bread crumbs (panko or other)

Steps:

  • 1. Turn crockpot on and place rack inside. If you don't have a rack, roll up two sheets of heavy duty foil to make "runners" to hold the meat up off bottom of crockpot Rub pork roast with olive oil and set aside
  • 2. Remove stems from rosemary, thyme and cilantro and place leaves in food processor Pulse until finely chopped
  • 3. Place mustard, honey, salt, pepper, garlic powder and chopped herbs in mixing bowl Whisk until well blended
  • 4. Using brush or your hands, completely cover pork roast with mustard mixture, rubbing it in well. Roll roast in crumbs until completely covered Let set for about 5 minutes to be sure crumbs adhere to roast (add more if necessary)
  • 5. Place in crockpot, turn setting to low and cook for 6-8 hours until roast is fall apart tender. Be prepared for tempting heavenly smells while it's cooking.
