Categories     Main Dish

Number Of Ingredients 8

2 racks baby back ribs (or pork spare ribs)
2 cups barbecue sauce
1 tablespoon smoked paprika
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon ground mustard

Steps:

  • Remove the membrane from the back of the ribs. Just slide your fingers around the side to loosen it up and rip it right off.
  • In a small bowl, stir together the ingredients for the dry rub. Rub this mixture generously over the outside of the ribs to coat.
  • Put your ribs in the crockpot. Drizzle on 1 1/2 cups of barbecue sauce, reserving 1/2 cup for later.
  • Cook on low for 8 to 10 hours. The more racks in the pot, the longer you'll need to cook.
  • Gently remove the racks and lay them out on a foil lined baking sheet. Add the reserved barbecue sauce on top.
  • Broil under a broiler for 3-5 minutes until the barbecue sauce starts to bubble and caramelize. Alternately you could wrap them in foil and throw them on a heated grill for the same effect.

Categories     main-dish

Time 4h40m

Yield 6 servings

Number Of Ingredients 11

One 6-ounce can tomato paste
1/3 cup packed dark brown sugar
1/4 cup apple cider vinegar
1 tablespoon chili powder
1 tablespoon ground mustard seeds
2 teaspoons granulated garlic
2 teaspoons smoked paprika
2 teaspoons Worcestershire sauce
Kosher salt and freshly ground black pepper
3 racks baby back ribs (about 3 pounds)
Oil, for grilling

Steps:

  • Whisk the tomato paste, brown sugar, vinegar, chili powder, mustard, garlic, paprika, Worcestershire, 1 1/2 tablespoons salt and 1 teaspoon pepper in the insert of a 6-quart slow cooker until smooth. Cut each rack of ribs in half and add to the slow cooker. Use your hands to rub the sauce on to the ribs. Cover with a lid and cook on low heat until tender, about 4 hours.
  • Gently transfer the ribs to a baking sheet and cool for at least 20 minutes; this will help maintain the shape of the ribs as they grill. Whisk the sauce at the bottom of the slow cooker until smooth. Reserve 1/4 cup of the sauce to brush on to the ribs and save any remaining sauce to serve on the side (it will thicken as it cools).
  • Preheat a grill or grill pan to medium-high heat. Lightly oil the grates. Grill the ribs, top-side down, until lightly charred in parts, 3 to 5 minutes. Flip, brush the top side of the ribs with the reserved barbecue sauce and grill until the underside of the ribs are lightly charred in parts, 3 to 5 minutes. Remove to a platter and serve immediately with the extra barbecue sauce on the side.

CROCKPOT RIBS AND TATERS

Crockpot Ribs and Taters image

During the heat wave of July 2011 we got tired of grilling and bbq. The crockpot did get more than it's fair share of use. Using what I had on hand I made this dish and was very happily surprised at the great outcome! I grew up with Mom fixing neck bones & potatoes often, so I thought this might be a close call to a trip down memory lane yet updated.

Tips:

  • Choosing the right ribs: Select meaty ribs with good marbling for a tender and flavorful result.
  • Seasoning the ribs: Use a flavorful rub to enhance the taste of the ribs. Paprika, garlic powder, onion powder, cumin, chili powder, and cayenne pepper are some common spices used in rubs.
  • Browning the ribs: Searing the ribs before slow cooking adds color and caramelizes the sugars for better flavor.
  • Using a slow cooker liner: Consider using a slow cooker liner for easy cleanup.
  • Adding moisture: Pour in liquid, such as water, broth, or beer, to prevent the ribs from drying out.
  • Cooking time: Allow ample time for cooking, usually 6-8 hours on low or 3-4 hours on high.
  • Testing the tenderness: Use a fork or tongs to check the tenderness of the ribs. The meat should easily pull away from the bone.
  • Glazing the ribs: Apply a glaze or sauce during the last 30 minutes of cooking for added flavor and color.

Crockpot ribs and taters are a delightful and convenient meal that requires minimal effort. The slow cooking process ensures tender fall-off-the-bone ribs while the potatoes cook to perfection, absorbing the flavorful juices from the ribs.
