CROCKPOT RIBS AND TATERS

Crockpot Ribs and Taters image

During the heat wave of July 2011 we got tired of grilling and bbq. The crockpot did get more than it's fair share of use. Using what I had on hand I made this dish and was very happily surprised at the great outcome! I grew up with Mom fixing neck bones & potatoes often, so I thought this might be a close call to a trip down memory lane yet updated.

CROCKPOT BABY BACK RIBS WITH POTATOES AND VEGGIES

Crockpot Baby Back Ribs With Potatoes and Veggies image

This is a really easy, delicious recipe for when it's to cold to do ribs on the grill and only uses your crockpot so you aren't dirtying a bunch of pots and pans! Another great thing is that this isn't a "set in stone" recipe. If you like red potatoes instead of yellow? Use them! You prefer a different bbq sauce or spice rub? Use it! NOTE: All seasonings are to taste. This site just makes me use measurements so I guessed there. I used McCormick Grill Mates Cowboy Rub for my "dry rub seasonings" it just wouldn't recognize it as a food.

This works out great on nights when the kids have games. Then when we don't get home until 7pm and everyone is starving.. dinner is ready!

CROCKPOT BEEF SHORT RIBS

Found this recipe online a while ago and it is so good I wanted to share with all of you. Enjoy!

Provided by Melissa Turner

Categories     Ribs

Time 8h30m

Number Of Ingredients 16

2 Tbsp vegetable oil
1 large yellow onion (peeled and sliced)
1 bag(s) baby carrots (small bag)
3 stalks of celery (sliced)
3 clove garlic (minced)
3 sprig(s) thyme
1 sprig(s) rosemary
1/3 c flour
8 beef short ribs (about 2 lbs)
2 c red wine
1 3/4 c beef stock
1 can(s) tomato sauce (8 ounce)
1 Tbsp packed brown sugar
2 Tbsp dijon mustard
2 Tbsp worcestershire sauce
3 bay leaves

Steps:

  • 1. Heat 1 tablespoon of oil in a large saucepan over medium-high heat. Cook the onion, carrots, and celery for 8 to 10 minutes, until just beginning to color. Add the garlic, thyme, and rosemary, and cook for a further couple of minutes. Remove from the pan and place in the bottom of a slow cooker.
  • 2. Season the flour generously with salt and pepper. Coat the short ribs well in the flour. Heat the remaining oil in the pan and brown the short ribs in 2 batches until golden, adding any remaining flour with the second batch of ribs. Remove the ribs from the pan and place on top of the vegetables in the slow cooker.
  • 3. Add the wine to the pan to deglaze, and reduce it by half, scraping the bottom of the pan to release any sediment. Add the stock, tomato sauce, brown sugar, mustard, Worcestershire sauce, and bay leaves, and stir to combine. Pour the sauce over the ribs and vegetables in the slow cooker. Cover and cook on low for 8 hours or high for 4 hours, stirring occasionally. Season to taste. Serve over mashed potatoes or a creamy polenta.

CROCKPOT RIBS WITH HOMEMADE BBQ SAUCE

CROCKPOT RIBS WITH HOMEMADE BBQ SAUCE image

Categories     Pork     Quick & Easy

Number Of Ingredients 13

4 pounds boneless pork ribs cut into 2-3 inch strips
1 large white onion cut in quarters
2 Tbs. olive oil
BBQ sauce: makes 2.5 cups
2 Tbs. vegetable oil
1 onion, finely chopped
3 garlic cloves, minced
1 1/2 cups ketchup
1/2 cup cider vinegar
1/4 cup Worcestershire sauce
1/3 cup sugar
1 Tbs. chili powder
1/2 tsp. cayenne pepper, or as needed

Steps:

  • 1.Make your BBQ sauce first: Warm the oil on medium beat in a saucepan. Add the onion and garlic and cook gently, stirring, for about 5 minutes. Add the ketchup, vinegar, Worcestershire sauce, sugar, chili powder and cayenne, to taste (the more cayenne you use, the hotter it will be). Reduce the heat and simmer, partially covered, until the sauce has thickened slightly, about 20 minutes. 2. Coat your crock pot with olive oil (I use a brush) 3. Place pork ribs steaks in crockpot. You can stack them so they all fit. 4. Pour the BBQ sauce on top of the ribs 5. Sprinkle the quartered onion on top. 6. Set crock pot at 8 hours. 7. Go to sleep and wake up to yummie ribs!

Tips:

  • Choose the right ribs: Baby back ribs are the most popular choice for crockpot ribs, but you can also use spare ribs or country-style ribs.
  • Trim the ribs: Remove any excess fat or membrane from the ribs before cooking.
  • Season the ribs: Rub the ribs with your favorite seasonings or a store-bought rib rub.
  • Sear the ribs (optional): Searing the ribs before cooking them in the crockpot will help to develop a nice crust and flavor.
  • Add liquid to the crockpot: You can use water, broth, or even beer as the liquid in your crockpot ribs recipe.
  • Cook the ribs on low heat: The ideal cooking temperature for crockpot ribs is between 170 and 190 degrees Fahrenheit.
  • Cook the ribs for 6-8 hours: The cooking time will vary depending on the type of ribs you are using and the desired tenderness.
  • Test the ribs for doneness: The ribs are done cooking when the meat is fall-off-the-bone tender.
  • Let the ribs rest before serving: Allow the ribs to rest for 10-15 minutes before serving to allow the juices to redistribute.

Conclusion:

Crockpot ribs are an easy and delicious way to enjoy ribs at home. With a few simple ingredients and a little time, you can create fall-off-the-bone tender ribs that are sure to please everyone at your table. So next time you're looking for an easy and flavorful meal, give crockpot ribs a try.
