Tips:

  • Choose the right pork shanks: Look for shanks that are meaty and have a good amount of marbling. Avoid shanks that are too fatty or have a lot of bone.
  • Sear the pork shanks before cooking: Searing the shanks adds flavor and helps to brown them. This will give your dish a more complex flavor.
  • Use a good quality sauerkraut: The sauerkraut is a key ingredient in this dish, so make sure to use a good quality one. Look for sauerkraut that is made with fresh cabbage and has a tangy, slightly sour flavor.
  • Add some vegetables: Vegetables such as carrots, celery, and onions can be added to the crock pot along with the pork shanks and sauerkraut. This will help to add flavor and texture to the dish.
  • Season the dish to taste: Season the dish with salt, pepper, and other spices to taste. You can also add a bay leaf or two for extra flavor.
  • Cook the dish on low for 8-10 hours: This will allow the pork shanks to become fall-off-the-bone tender and the sauerkraut to soften.

Conclusion:

Pork shanks and sauerkraut is a classic comfort food dish that is perfect for a cold winter day. It is easy to make and can be cooked in the crock pot, making it a great option for busy families. The combination of tender pork, tangy sauerkraut, and flavorful vegetables makes this dish a surefire hit.
