Time 4h15m

Yield 4-6 serving(s)

Number Of Ingredients 9

1 (15 ounce) can French style green beans, drained
1 (15 ounce) can white corn, drained
1 (15 ounce) can sliced water chestnuts, drained
1/4-1/2 cup butter, melted
1 (15 ounce) can cream of celery soup
1 cup sour cream
1 medium onion, diced
1 cup grated cheese
1 (6 ounce) packet crushed Ritz crackers

Steps:

  • Layer green beans, corn and water chestnuts in the bottom of your slow cooker.
  • Combine celery soup, sour cream, onion and grated cheese.
  • Spread over top of vegetables.
  • Sprinkle with salt and pepper to taste.
  • Cover and cook on low for 4 to 6 hours or on high for 2 to 3 hours.
  • Mix crushed Ritz crackers and melted butter and sprinkle on top.
  • Serve hot.

Tips:

  • Choose the right vegetables: Select a variety of vegetables that will cook evenly and hold their shape well in the crockpot. Heartier vegetables like carrots and potatoes should be cut into smaller pieces to ensure even cooking.
  • Season well: Don't be afraid to season your vegetables generously. Use a combination of herbs, spices, and seasonings to create a flavorful dish. Common options include salt, pepper, garlic powder, onion powder, dried oregano, and dried thyme.
  • Add a liquid: A small amount of liquid is necessary to prevent the vegetables from drying out in the crockpot. Use water, vegetable broth, or even white wine for a richer flavor.
  • Cook on low and slow: The key to tender, flavorful vegetables is to cook them on low heat for a long period of time. This allows the vegetables to cook through without becoming mushy.
  • Stir occasionally: Give the vegetables a stir every few hours to ensure even cooking and prevent them from sticking to the bottom of the crockpot.

Conclusion:

Crockpot mixed vegetables are a delicious and healthy side dish that can be enjoyed with a variety of main courses. The slow-cooking process brings out the natural sweetness of the vegetables and infuses them with flavor from the herbs, spices, and seasonings. Serve them as a side dish or as a vegetarian main course. With endless variations and simple preparation, crockpot mixed vegetables are a versatile and crowd-pleasing dish that fits any occasion.
