Time 40m

Yield 4 servings

Number Of Ingredients 12

1 pound red-skinned potatoes, cut into 1/2-inch pieces
Kosher salt
4 tablespoons unsalted butter, at room temperature
4 cloves garlic (1 grated, 3 minced)
1/4 cup chopped fresh parsley
1 tablespoon fresh oregano
1/2 teaspoon finely grated lemon zest, plus 1 tablespoon juice
1 1/2 pounds skirt steak, cut into 4 pieces
Freshly ground pepper
1/4 cup vegetable oil
6 ears of corn, kernels cut off (about 4 1/2 cups)
4 scallions, thinly sliced

Steps:

  • Put the potatoes in a large nonstick skillet; cover with water and season with salt. Bring to a boil, reduce the heat to a simmer and cook until just tender, about 10 minutes. Drain, blot dry with paper towels and wipe out the skillet.
  • Meanwhile, combine the butter, grated garlic, parsley, oregano, lemon zest and a big pinch of salt in a food processor. Pulse until smooth; set aside.
  • Season the steak with salt and pepper. Heat a large skillet over medium-high heat. Add 2 tablespoons vegetable oil. Add the steak and cook until well browned, 3 to 4 minutes per side for medium rare. Transfer to a cutting board to rest.
  • While the steak cooks, heat the reserved nonstick skillet over high heat. Add the remaining 2 tablespoons vegetable oil and the potatoes. Cook, stirring occasionally, until the potatoes are browned around the edges, about 5 minutes. Add the corn, minced garlic and a pinch of salt; cook, undisturbed, until the corn is lightly browned, about 3 minutes. Add the scallions and cook, tossing, until combined. Season with salt and pepper and stir in the lemon juice.
  • Divide the vegetables among plates. Slice the steak and add to the plates; top with the garlic butter.

Provided by Mebriella

Categories     Steak

Time 6h15m

Yield 4 serving(s)

Number Of Ingredients 6

4 small petite sirlion steaks
1/2 cup A.1. Original Sauce or 1/2 cup Heinz 57 steak sauce
4 baking potatoes
4 corn on the cob
aluminum foil
canola oil cooking spray

Steps:

  • Place steaks on bottom of crock pot. Pour steak sauce over top.
  • Take a layer of foil, spray it with canola oil and set oil-side down on steaks.
  • Wrap potatoes in foil, set them on top of steaks.
  • If using frozen corn, wrap individually in foil, set along side of potatoes.
  • Set on LOW for 6 hours.

Tips:

  • Prep the Potatoes: To save time, use pre-cut or frozen potatoes. If using fresh potatoes, peel and cut them into 1-inch cubes.
  • Season Generously: Don't be shy with the seasonings! Garlic powder, onion powder, paprika, and salt and pepper add a delicious depth of flavor to the dish.
  • Layer Wisely: Place the vegetables on the bottom, then the steak, and finally the corn on the cob. This ensures that the vegetables cook evenly and the steak stays tender.
  • Cook Low and Slow: The key to a fall-apart tender steak is cooking it on low heat for a long period. 8-10 hours on low is ideal.
  • Use a Meat Thermometer: To ensure the steak is cooked to your desired doneness, insert a meat thermometer into the thickest part of the steak. Cook until it reaches an internal temperature of 145°F for medium-rare, 160°F for medium, or 170°F for well done.

Conclusion:

This Crockpot Layered Dinner is a simple yet impressive meal that is perfect for busy weeknights or casual gatherings. With tender steak, flavorful vegetables, and sweet corn on the cob, this dish is a crowd-pleaser that requires minimal effort. So gather your ingredients, layer them in your slow cooker, and let the magic happen!
