8 chicken thighs
1 green pepper, chopped
1 small onion, chopped
6 green onions, chopped
2 garlic cloves, crushed
1 (16 ounce) can chopped tomatoes
1 (6 ounce) can tomato paste
1/4 lb ham, cut into cubes
1 teaspoon salt
1 (8 ounce) can tomato sauce
3 -5 dashes hot sauce
1 (4 ounce) can diced green chilies, drained
creole seasoning
3 cups cooked rice
1/2 lb kielbasa, sliced diagonally

Steps:

  • In a slow cooker combine the chicken, green pepper, onions, tomatoes, tomato paste, tomato sauce, ham, chilies, and seasonings.
  • Cover and cook on low heat 4- 5 hours.
  • Turn the slow cooker to high.
  • Add the kielbasa and rice.
  • Cover and cook on high for 20 minutes or until sausage and rice are hot.

12 ounces smoked andouille sausage (cut in 1- to 2-inch lengths)
1 cup chopped onions
3/4 cup chicken broth or water
1 can (14.5 ounces) diced tomatoes
1 can (6 ounces) tomato paste
2 teaspoons Creole or Cajun seasoning
Dash cayenne pepper, to taste
1 green bell pepper, chopped
Dash salt and pepper, to taste
For Serving:
Cooked rice (white or brown) or pasta (spaghetti or angel hair)

Steps:

  • Gather the ingredients.
  • In a slow cooker, combine the chicken thigh pieces, slices of andouille sausage, chopped onion, broth or water, canned tomatoes (with their juices), tomato paste, Creole seasoning, and cayenne pepper.

I love a good chicken leg recipe. No one ever said you have to pay a lot to eat well. This is homestyle Cajun comfort food, easily made in the slow cooker. It's not that much different from my chicken gumbo the way I learned, except this is thicker, and has no okra or gumbo file.

2-1/2 lb bone-in chicken legs and/or thighs
1 c chopped onion
1 c diced celery
1 green bell pepper, diced
3 clove garlic, chopped
1 tsp dried thyme
2 Tbsp olive oil
2 can(s) diced tomatoes (15.5 ounces each)
2 Tbsp prepared roux
1/2 c dry red wine, such as cabernet sauvignon
1 tsp cajun spice blend
salt and black pepper to taste
1 splash tabasco sauce
steamed long grain rice to serve

Steps:

  • 1. Heat oil in a large nonstick skillet and brown chicken pieces; then place them in the bottom of the crock.
  • 2. Add the onion, celery, bell pepper, garlic and thyme to the pan and saute for about 2-3 minutes until onions become translucent.
  • 3. Add the red wine to the pan and stir, letting it pretty much cook off.
  • 4. Stir inn the roux, diced tomatoes, cajun spice, salt and black pepper. Add hot sauce to taste.
  • 5. Pour mixture over the chicken legs in the crock, then cover and cook on low for 4-5 hours or until chicken is cooked through.
  • 6. Serve with steamed rice (I also like adding more hot sauce but that's just me).

1 red bell pepper, chopped
1 green bell pepper, chopped
1 medium onion, chopped
1 cup celery, chopped
1 (16 ounce) can diced tomatoes
1 (7 ounce) can drained sliced mushrooms
1 teaspoon sugar
1 teaspoon cajun seasoning
1/2 teaspoon paprika
1 teaspoon garlic powder
hot sauce, to taste

cooked brown rice
