Time 6h5m

Yield 6 serving(s)

Number Of Ingredients 11

2 1/2 cups diced cooked turkey breast (for ease, buy a precooked breast, such as Jennie-O)
1 (14 1/2 ounce) can fat-free chicken broth
1 (10 1/2 ounce) can low-fat cream of mushroom soup
2 teaspoons sherry wine or 2 teaspoons cooking wine
1/2 cup shredded low-fat cheddar cheese
8 ounces canned mushroom slices, drained
1/4 cup pimento stuffed olive (optional)
12 ounces uncooked spaghetti
parmesan cheese
3 tablespoons water
1 1/2 tablespoons cornstarch

Steps:

  • Place all ingredients except spaghetti, parmesan, water and cornstarch into crock pot; stir.
  • Cook on low for 6-8 hours.
  • Serve over cooked spaghetti; sprinkle with parmesan cheese.
  • Prior to serving, you'll probably want to thicken this a little more. Mix lukewarm water and cornstarch in a bowl until corn starch is dissolved. Add to crock pot mixture. Stir until thickened. If it it not thick enough you may repeat this step.

Tips:

  • Use a quality turkey: Opt for a fresh or frozen whole turkey or turkey breast with no added salt or flavorings.
  • Cook the turkey thoroughly: Use a meat thermometer to ensure the internal temperature reaches 165°F (74°C).
  • Make the sauce creamy and flavorful: Use a combination of butter, flour, milk, and seasonings to create a rich and creamy sauce. Add a splash of white wine or chicken broth for extra flavor.
  • Use a variety of mushrooms: Feel free to mix and match different types of mushrooms, such as cremini, shiitake, or oyster mushrooms, for a more complex flavor and texture.
  • Don't overcook the pasta: Cook the pasta according to the package instructions, but be careful not to overcook it, as it will continue to cook in the casserole.
  • Add a crispy topping: Before baking, sprinkle some breadcrumbs or crushed crackers on top of the casserole for a golden brown and crunchy topping.
  • Let it rest before serving: Once the casserole is baked, let it rest for a few minutes before serving to allow the flavors to meld together.

Conclusion:

Crock-Pot turkey tetrazzini is a comforting and flavorful casserole that is perfect for a weeknight dinner or a special occasion. With its creamy sauce, tender turkey, and variety of mushrooms, this dish is sure to be a hit with everyone at the table. Be sure to follow the tips above to ensure that your turkey tetrazzini turns out perfectly.
