Categories     Chicken Breast

Time 3h3m

Yield 4 chicken breasts, 4 serving(s)

Number Of Ingredients 4

1 (15 ounce) can black beans, drained and rinsed
2 (15 ounce) cans corn, drained
1 (16 ounce) jar salsa
4 chicken breasts

Steps:

  • Put all ingredients into a crock pot at the same time. High for 3-4 hrs or low for 7-8.
  • Put in tortillas with sour cream and cheese or serve over rice.

Tips:

  • Chicken breasts or thighs can be used in this recipe. Boneless, skinless chicken breasts will cook more quickly than thighs, so adjust the cooking time accordingly.
  • If you don't have a crock pot, you can also make this recipe in a slow cooker.
  • Be sure to use long grain rice for this recipe. Short grain rice will become too mushy.
  • Add more or less cayenne pepper to taste. If you like a spicy dish, add more cayenne pepper. If you prefer a milder dish, use less.
  • Garnish the finished dish with fresh cilantro or parsley for a pop of color and flavor.

Conclusion:

This crock pot southwest chicken and rice is an easy and delicious meal that is perfect for a busy weeknight. It is also a great recipe for meal prepping. Simply cook the chicken and rice ahead of time and then reheat it when you are ready to eat. This dish is also freezer friendly, so you can make a big batch and freeze it for later.
