Time 5h30m

Number Of Ingredients 13

12 oz pkg hillshire farms beef lil smokies, halved
6-8 small red potatoes quartered,
2 Tbsp minced garlic
2 ribs celery, sliced
1 pkg dry onion soup mix
1 can(s) condensed cream of mushroom soup
1 medium red bell pepper, seeded and diced
1 can(s) 14.5 ounces; diced tomatoes, undrained
1 can(s) 15.25 ounces corn, drained
4 c chicken broth
1 tsp dried thyme
1 tsp salt
1 tsp freshly ground black pepper

Steps:

  • 1. Place cut sausage, potatoes and vegetables into crock pot.
  • 2. Combine chicken broth, dry onion soup mix, and cream of mushroom soup. Mix well to combine all ingredients.(What I did was stir together the mushroom and dry onion soup using just about 1/2 of the chicken broth to dissolve the dry soup base and thin out the mushroom soup and then added the remaining chicken broth) Pour over vegetables and sausage in crock pot.
  • 3. Cook on Low for 6-8 hours or High for 3-4 hours. **OPTIONAL: approx 5 minutes before serving you may stir in 1/2 cup sour cream.

Tips:

  • Use a variety of sausages. This will give your soup a more complex flavor. Good choices include Italian sausage, kielbasa, and breakfast sausage.
  • Brown the sausage before adding it to the soup. This will help to develop its flavor and prevent it from becoming greasy.
  • Use a good quality chicken broth. This will make a big difference in the flavor of your soup.
  • Don't overcook the potatoes. They should be tender, but not mushy.
  • Add some fresh herbs to the soup before serving. This will brighten up the flavor and make it even more delicious.

Conclusion:

Crock Pot Sausage Potato Soup is a hearty and flavorful soup that is perfect for a cold winter day. It is easy to make and can be tailored to your own taste preferences. With a few simple tips, you can make a delicious and satisfying soup that your family and friends will love.
