Steps:
- 1. Place cut sausage, potatoes and vegetables into crock pot.
- 2. Combine chicken broth, dry onion soup mix, and cream of mushroom soup. Mix well to combine all ingredients.(What I did was stir together the mushroom and dry onion soup using just about 1/2 of the chicken broth to dissolve the dry soup base and thin out the mushroom soup and then added the remaining chicken broth) Pour over vegetables and sausage in crock pot.
- 3. Cook on Low for 6-8 hours or High for 3-4 hours. **OPTIONAL: approx 5 minutes before serving you may stir in 1/2 cup sour cream.
Tips:
- Choose the right sausage: For a bolder flavor, use a spicy sausage like kielbasa or chorizo. For a milder flavor, use a sweet or mild Italian sausage.
- Don't overcook the sausage: Overcooked sausage will become tough and dry. Cook it until it is just cooked through, about 10 minutes.
- Use a variety of potatoes: This will give the soup a more interesting texture and flavor. Good options include russet potatoes, Yukon Gold potatoes, and red potatoes.
- Add vegetables: Vegetables will add nutrients and flavor to the soup. Good options include carrots, celery, onions, and garlic.
- Season the soup well: Use a variety of spices and herbs to season the soup to your liking. Good options include salt, pepper, garlic powder, onion powder, and paprika.
- Let the soup simmer: Simmering the soup will help the flavors to meld and develop. Simmer it for at least 30 minutes, or up to 2 hours.
- Serve with your favorite toppings: Sour cream, shredded cheese, chopped green onions, and crumbled bacon are all great options.
Conclusion:
Crock Pot Sausage and Potato Soup is a hearty, flavorful, and easy-to-make soup that is perfect for a weeknight meal. It is also a great way to use up leftover sausage and potatoes. With a few simple ingredients and a little bit of time, you can have a delicious soup that the whole family will love.
