1/2 teaspoon caraway seed
1/2 teaspoon black pepper
1 small baking apple, peeled, cored and diced very small (can use about 1/3 c applesauce instead)
2 lbs sauerkraut, undrained
1/4 cup packed brown sugar
4 tablespoons butter, melted
salt, if needed, to taste

Steps:

  • Place pork loin in crock pot. Sprinkle with caraway seeds and black pepper.
  • Place diced apple (or applesauce) on top of pork.
  • Pour sauerkraut and juice on top.
  • Evenly sprinkle the brown sugar on top of the sauerkraut.
  • Drizzle the top with melted butter.
  • Cook on low for about 8 hours or until pork reaches internal temp of at least 160 degrees F.

1 apple, peeled & diced (any kind)
2 large onions, chopped
1 baking potato, peeled & grated
1/2 cup beer (nonalcoholic alternative 1/2 cup apple juice) or 1/2 cup white wine (nonalcoholic alternative 1/2 cup apple juice)

1 quart vinegar-pickled sauerkraut, drained and rinsed well
1/2 lb bacon, cut into small pieces
1 granny smith apple, cored and cubed
1 ripe pears or 1 an additional apple, cored and cubed
1/2 cup chopped onion
2 stalks celery, chopped
3 lbs smoked sausage, cut into 1/2 inch pieces
2 tablespoons olive oil
2 tablespoons butter
3 tablespoons flour
3 tablespoons dark brown sugar
1 tablespoon minced garlic
1 tablespoon Dijon mustard
12 ounces hard alcoholic cider
salt & freshly ground black pepper, to taste

Steps:

  • In a colander over the sink, drain then rinse the sauerkraut well with cool water, allow to drain for 5 to 10 minutes; repeat at least once.
  • While sauerkraut is draining, cut the bacon into small pieces then in a large pan over medium heat, fry bacon until crisp.
  • While bacon is cooking, cut up the apple (s), pear (if using), onion, celery, and sausage.
  • When the bacon is done, remove the cooked bacon from the pan and set aside; add olive oil and butter to bacon drippings and let butter melt.
  • Sprinkle the flour into the dripping mixture while stirring and cook until golden and bubbly, then add the brown sugar, garlic, and Dijon and cook for another minute, then gradually stir in the hard cider and cook- seasoning to taste with salt and pepper- until the sauce thickens, about 5 to 7 minutes.
  • Combine all prepared ingredients- drained/rinsed sauerkraut, chopped fruits/vegetables, bacon, sausage, and sauce- in a large crock pot (or 2 smaller ones) and cook on high for 4 hours or low for 6 to 8 hours.
  • This makes a very large batch, serving about 16 to 18 people as a main dish- good for big potlucks!

1 -2 lb polska kielbasa (the smoked type, adds the flavor to potatoes and kraut while cooking)
1 (14 1/2 ounce) can sauerkraut
3 (15 ounce) cans of whole potatoes

Steps:

  • Pour the large can or jar of sauerkraut, with juice, on one side of crock pot.
  • Drain 2 cans of potatoes and put on other side of crockpot.
  • Pour the other can of potatoes with juice inches.
  • Cut up meat into small chunks and put on top.
  • This must go for 10 hours on low (at the least) for the flavor of the meat to get to potatoes.
  • I substitute large can of sauerkraut with my own homemade and substitute the potatoes with one quart jar of my canned potatoes with a little of juice.

1 onion, chopped

1 1/2 teaspoons dried thyme
2 bay leaves
12 juniper berries (optional) or 1/4 cup gin (optional)

2 cups white wine or 2 cups white grape juice
4 cups chicken broth (or 4 cups water and 3 bouillon cubes)

Steps:

  • Place the drained sauerkraut in the slow cooker.

3 small potatoes, peeled and cubed
2 small granny smith apples, cored, peeled and cubed

1 1/2 lbs whole frozen pork tenderloin
1 1/2 cups apple cider
1/2 teaspoon salt
1/2 teaspoon peppercorn
1/3 cup brandy
8 ounces sauerkraut

  • Place the tenderloin in crockpot with the salt & peppercorns. Pour apple cider over. Turn to 300 degrees for 3 hours.

This is New Year's Day tradition in my family, although made on a larger scale using homemade kraut, this works just fine. Adjust the amount of kraut and pork to fit the size of your crock. Will melt in your mouth and will disappear quickly!

2 -3 lbs boneless pork shoulder
3 (1 quart) jars sauerkraut, undrained (Claussen's)
1 lb hot dog
2 onions, halved and quartered
1 teaspoon pepper
1/2 teaspoon salt
2 tablespoons oil

Steps:

  • Season pork shoulder to taste with salt & pepper.
  • Lightly brown pork shoulder on all sides in oil over med-low heat and place in crock-pot.
  • Add a little onion then some kraut and sprinkle of pepper and repeat until crockpot is almost full. May drain jar of kraut if too much liquid accumulates.
  • Cover and cook on low 8-10 hours. May stir after 6 hours and add liquid if needed. Add hotdogs, bratwurst and/or knockwurst during last hour or two. Recipe is done when pork falls apart when stirred.
  • Serve with mashed potatoes. hot dog buns, and mustard.
