SLOW COOKER CORNISH HENS
This is my fiance's favorite slow cooker meal of mine. I usually serve it with the veggies over wild rice. You can turn this recipe for 2 into 4 by splitting the hens lengthwise after cooking.

CROCK POT ROSEMARY CORNISH GAME HEN
What a terrific special occasion dinner! This recipe makes the Cornish hens tender. We liked the savory spices, but adjust the garlic and rosemary to your liking. Since these Cornish hens are made in the Crock Pot it's an easy, can't-miss meal.

CROCK POT GAME HEN
A first attempt at game hen. Easy easy easy, and it turned out amazing! The meat falls right off the bone. I used what seasonings I had on hand, but think it has a lot of options for various flavors/tastes.

Steps:
- Preheat oven to 450 degrees F (230 degrees C).
- Rub hens with 1 tablespoon of the olive oil. Lightly season hens with salt and pepper. Place 1 lemon wedge and 1 sprig rosemary in cavity of each hen. Arrange in a large, heavy roasting pan, and arrange garlic cloves around hens. Roast in preheated oven for 25 minutes.

Continue roasting about 25 minutes longer, or until hens are golden brown and juices run clear. Baste with pan juices every 10 minutes.
- Transfer hens to a platter, pouring any cavity juices into the roasting pan. Tent hens with aluminum foil to keep warm. Transfer pan juices and garlic cloves to a medium saucepan and boil until liquids reduce to a sauce consistency, about 6 minutes. Cut hens in half lengthwise and arrange on plates. Spoon sauce and garlic around hens. Garnish with rosemary sprigs, and serve.

Tips:

- Prepare the hens. Rinse the hens inside and out and pat them dry. Season the hens with salt, pepper, and any other desired spices.
- Stuff the hens. You can stuff the hens with a variety of fillings, such as bread crumbs, rice, vegetables, or fruit. If you are using a stuffing mix, be sure to cook it according to the package directions.
- Cook the hens. Place the hens in a slow cooker and cook them on low for 6-8 hours, or until they are cooked through. You can also cook the hens in a roasting pan in the oven at 350 degrees Fahrenheit for 1-1.5 hours, or until they are cooked through.
- Serve the hens. Once the hens are cooked, let them rest for a few minutes before carving. Serve the hens with your favorite sides, such as mashed potatoes, roasted vegetables, or salad.
