This Crock Pot Roast recipe is easy to make with potatoes, carrots, and thick and flavorful gravy. The meat is moist and full of flavor, your family will love this home cooked meal!

3-4 lb. Chuck Roast (see notes for other cut options)
2 tablespoons flour
4 tablespoons olive oil
3 tablespoons cold water + 3 tablespoons corn starch (to thicken the gravy at the end)
2 teaspoons brown sugar
½ teaspoon black pepper
1 teaspoon salt
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon chili powder
1 teaspoon paprika
1 cup chicken broth
2 cups beef broth
1 cube beef bouillon (or 1 tsp better than bouillon)
1 ½ teaspoon onion powder
1 teaspoon garlic powder
1 teaspoons low sodium soy sauce (can sub Worcestershire)
2-3 drops Kitchen Bouquet browning and seasoning sauce (optional: gives it a darker color)
1 Tablespoon cold unsalted butter
2 ¼ lbs. baby potatoes (see notes)
2 lbs. whole carrots (cut into halves or thirds.)

Steps:

  • Pat roast completely dry. Combine seasoning ingredients and massage it onto all sides of the roast, followed by the flour.
  • Heat olive oil in a large pan over medium-high heat. Once the oil is shiny and heated, add the roast and sear on each side for 2-3 minutes, until a brown crust has developed. Decrease heat slightly if needed during cooking. Remove from heat and set aside.
  • Whisk together the gravy ingredients and add some of it to the skillet that you used to sear the roast. Use a silicone spatula to "clean" the bottom and sides of the skillet, this will give the gravy more flavor. Transfer it to the slow cooker along with the remaining gravy, followed by the pot roast and any juices from the plate.
  • Cut the potatoes in half or thirds of equal size. (If 1-2 inch potatoes, you can leave them whole.)
  • Peel the carrots and slice them into halves or thirds. Very thick carrots can also be sliced in half lengthwise.
  • Arrange the potatoes around the roast and top with carrots. Place the lid securely on top and resist the temptation to open it during cooking as you'll lose a lot of heat.
  • Cook on high for 5-6 hours or on low for 8-10 hours.
  • Carefully remove the carrots, potatoes, and the roast and set on a serving platter. Tent with foil.

4 -5 pound beef roast (any cut)
Salt and Pepper to taste
1 Tablespoon butter
1 large onion sliced (thin)
1 Tablespoon garlic powder
3/4 cup sour cream
3 Tablespoons all purpose flour
1/2 cup canned beef broth or dry white wine

Steps:

  • 1. Salt and pepper your beef roast. In a large frying pan or dutch oven melt 1 tablespoon of butter. Sear the roast on all sides. Remove the roast and place the sliced onions in the pan to saute until translucent.
  • 2. Place the roast, sauteed onions and garlic powder in the crock pot, turn on low with the lid on and cook 7 hours or until the roast is tender.
  • 3. Remove the broth from the crock pot to a saucepan. Stir the flour into the sour cream, add 1/2 cup canned beef broth or white wine, stir until combined. Add the broth from the crock pot. Heat the sour cream gravy until it thickens slightly. Add salt and pepper to taste. Spoon over sliced roast beef.

2 lbs boneless beef roast (I prefer sirloin)
1 (14 1/2 ounce) can beef broth
3 medium potatoes, peeled and cubed
15 baby carrots, whole
1 large red onion, chopped
2 tablespoons butter
1 tablespoon all-purpose flour
8 ounces low-fat sour cream
1/4 teaspoon salt
1/8 teaspoon pepper

Steps:

  • Remove roast from freezer, and thaw overnight in the refrigerator.
  • Place roast in a crock pot.
  • Add chopped onion.
  • Add can of beef broth.
  • Cook on low 8-10 hours.
  • Add other vegetables half way through cooking. Add water to better cover the vegetables if necessary.
  • Remove vegetables and roast from crock pot and reserve broth.
  • Melt 2 tablespoons of butter in a large skillet on medium.
  • Add flour and cook for two minutes until the mixture is smooth.
  • Add 1 1/2 cups of the reserved broth and bring to a boil. Cooking into smooth and thickened.
  • Add sour cream, salt and pepper and heat through.
  • Serve with roast and vegetables.

5 sm Potatoes (up to 6)

Steps:

  • Coat roast with flour, salt and pepper. Brown in oil in skillet. Put roast in crock pot, add water and vinegar. Sprinkle dill weed over meat, then add potatoes, carrots, onion and 1/2 teaspoon salt. Cook on low for 10-12 hours or high for 6 hours. To make gravy, pour off 3 tablespoons drippings, add flour and heat. Measure rest of drippings, add water to make 1 cup. Add to flour mixture and heat for 1 minute, stirring constantly. 1 teaspoon salt
1/4 teaspoon pepper
1 boneless beef chuck roast (2-1/2 pounds)
1/4 cup water
1 tablespoon cider vinegar

1 cup sour cream

2 1/2-3 lbs beef roast
2 teaspoons salt, divided
1/2 teaspoon pepper, divided
1/4 teaspoon garlic powder
2 tablespoons flour
1 1/2-2 teaspoons dill weed, divided
1 -2 tablespoon oil
1/2 cup water
5 small potatoes, pared
5 carrots, quartered
1 tablespoon vinegar
8 ounces sour cream
1/2-1 teaspoon dill weed
2 -4 celery ribs, quartered (optional)
1 lb zucchini, quartered (optional)
1 tablespoon red wine, in gravy (optional)

Steps:

  • Mix 1 teaspoon of salt with pepper and garlic powder. Grocery stores sell a seasoning mixture of same, which I use 1-1/2 tsp).
  • Rub generously over all sides of roast and then coat same with flour.
  • On med-high in a large dutch oven, heat oil and brown roast on all sides.
  • In same pot with roast, add water and vinegar (I left out) and sprinkle 1 tsp dill weed over roast.
  • Cover tightly and simmer 3 hours or until meat is tender. In crockpot, cook 8 hours on low heat.
  • One hour before end of cooking, add veggies and season with remaining salt & pepper. (optional zucchini, add 20 minutes before end of cooking time).
  • If using crock pot, remove roast, add veggies, return roast, raise heat to med-high and cook for 1 to 1-1/2 hours, add optional zucchini the last 30 minutes.
  • Serve with delicious sour cream gravy.
  • SOUR CREAM GRAVY.
  • Please meat and veggies on warm platter.
  • Using a large skillet, transfer 2-3 tbl pan drippings from roast and heat on med-high.
  • Add flour one T at a time and mix well with drippings. Heat 2 minutes stirring constantly. Remove from heat.
  • Using remaining drippings in pot to make 1 cup liquid, adding water if necessary.
  • Over med-high heat, whisk liquid into flour mixture a little at a time to prevent flour clots. (Add optional red wine now).
  • Once all liquid is added, bring to a boil for one minute.
  • Lower heat, Season with S&P to taste.
  • Stir in 1 cup sour cream and 1/2-1 tsp dill weed; heat through.
  • Gravy yields 2 cups.
