CROCK POT CHICKEN (OR PORK) FAJITAS
Edited to add: I just made these again last night using 1 lb of pork stir fry strips instead of chicken and it turned out great! Very flavorful. I stirred in an extra TBS of taco seasoning an hour before it was done based on the other reviews but I'm not sure it needed it. I would suggest maybe only adding the extra taco seasoning if your chicken breasts are large or you're using more than a pound of pork. These are really easy to make and taste Great rolled up in warm flour tortillas with all the usual fajita toppings.

Tips:
- For the Best Pulled Pork: Use a high-quality, well-marbled pork shoulder roast for the best results. Slow cooking allows the connective tissues to break down, resulting in tender, flavorful meat.
- Enhance the Flavor: Add a flavor-packed rub to the pork shoulder before cooking. This will create a delicious crust and infuse the meat with spices and herbs.
- Create a Flavorful Cooking Liquid: Use a combination of liquids like chicken broth, apple cider vinegar, and Worcestershire sauce to create a flavorful cooking liquid. This will help tenderize the pork and add depth of flavor.
- Slow and Low is the Way to Go: Cook the pork shoulder on low heat for an extended period. This allows the meat to cook evenly and become fall-apart tender.
- Shred the Pork Perfectly: Once the pork is cooked, shred it using two forks or a meat shredder. This will create tender, juicy pulled pork that's perfect for fajitas.
Conclusion:
These crock-pot pulled pork fajitas are a flavorful and versatile dish that's perfect for busy weeknights or casual gatherings. With just a few simple ingredients and minimal effort, you can create a delicious and satisfying meal that everyone will love.
