Time 3h15m

Number Of Ingredients 9

3 pounds russet or Yukon Gold potatoes
1 small onion (chopped)
4 tablespoons butter
1/4 cup all purpose flour
2 cups whole milk
2 teaspoons garlic powder
salt and pepper to taste
1 cup shredded Monterey Jack cheese
1 cup shredded sharp cheddar cheese

Steps:

  • Wash OR peel your potatoes. Slice to 1/8" thick, set aside. (I like to leave the peel on my potatoes)
  • Generously coat slow cooker with non-stick spray.
  • In a medium saucepan melt the butter over medium-low heat. Add flour and whisk to combine. Whisk in the milk, garlic powder, pepper, and a generous amount of salt. (I use at least a teaspoon.) Cook stirring frequently just until it starts to thicken. Remove from heat and stir in cheeses.
  • Place 1/3 of the sliced potatoes in the bottom of the slow cooker. Sprinkle with 1/3 of the chopped onion. Pour 1/3 of the cheese sauce over the potatoes and onions. Repeat this 2 more times. Cover and cook on high for 3-4 hours or low for 4-6 hours or until potatoes are tender. Let sit 20 minutes before serving.

Tips:

  • Choose the right potatoes: Yukon Gold or russet potatoes are best for this recipe, as they hold their shape well and won't become too mushy.
  • Slice the potatoes thinly: This will help them cook evenly and quickly.
  • Don't overcrowd the crock pot: Make sure there is enough space between the potatoes so that they can cook evenly.
  • Use a good quality olive oil: This will help to give the potatoes a nice flavor.
  • Season the potatoes well: Salt, pepper, garlic, and thyme are all good choices.
