- Place sauerkraut in a 3-1/2 to 4 quart crock pot. Trim fat from meat. If need be, trim the meat to fit in crock pot.
- Lightly sprinkle meat with salt and pepper. Spread mustard over meat and place the meat on top of the sauerkraut. Pour beer over the meat.
- Cover and cook on low heat setting for 8 to 10 hours or on high for 4 to 5 hours.

Surprisingly tasty and the result of a mistake that left me needing to come up with a dinner with super easy prep. Freezer to table. I grabbed my crockpot, took a pork tenderloin out of the freezer stuck it in the pot & free poured apple cider I had on hand over it. Put it on & went to work. Later in the day the meat was cooking well, but for our tastes, I knew I had to kick up the flavor. I only had a few minutes to spare. That's when I came up with the other 2 ingredients. - Place the tenderloin in crockpot with the salt & peppercorns. Pour apple cider over. Turn to 300 degrees for 3 hours.
- Pour in brandy, add sauerkraut, test for salt, add more to taste, reduce heat to 200 degrees for another 3 to 4 hours.

- combine drained sauerkraut, tomatoes (undrained), bay leaf, caraway seed, paprika, and pepper; pour over pork.

- Lightly brown pork shoulder on all sides in oil over med-low heat and place in crock-pot.
- Add a little onion then some kraut and sprinkle of pepper and repeat until crockpot is almost full. May drain jar of kraut if too much liquid accumulates.

- 1. Brown roast in frying pan.
- 2. After browning put roast in crock pot.
- 3. Drain half the brine off the sauerkraut and pour sauerkraut over the roast.
- 4. Core apple and slice thinly. Put on top of sauerkraut.

- 5. Sprinkle brown sugar over top.
