CROCK POT PORK ROAST AND SAUERKRAUT

Crock Pot Pork Roast and Sauerkraut image

Throw it in the crock pot on New Year's Eve before you go out, and dinner the next day will be ready; all you have to do is fix the mashed potatoes. Slow, low cooking makes a roast that is very tender. Delicious!! I used to manage a doctor's office, and our Blue Cross rep told me that her family made this every year for New Year's.

Tips:

  • To enhance the flavor of the pork roast, consider using a flavorful cut like pork shoulder or pork butt. These cuts contain more fat and connective tissue, which will break down during the slow cooking process, resulting in a tender and juicy roast.
  • Don't be afraid to experiment with different types of sauerkraut. There are many varieties available, from traditional German sauerkraut to American-style sauerkraut with caraway seeds. Each type will impart a unique flavor to the dish.
  • Add some hearty vegetables to the crock pot along with the pork roast and sauerkraut. Carrots, potatoes, and onions are all good options. They will absorb the delicious flavors of the pork and sauerkraut as they cook.
  • If you want a thicker sauce, mix together a cornstarch slurry (equal parts cornstarch and water) and stir it into the crock pot during the last 30 minutes of cooking. This will help to thicken the sauce without overpowering the other flavors.

Conclusion:

Cooking a crock pot pork roast with sauerkraut is an easy and delicious way to enjoy a classic comfort food. With just a few simple ingredients and a little time, you can create a hearty and flavorful meal that the whole family will love. Serve it with mashed potatoes, egg noodles, or a side of crusty bread for a complete and satisfying meal.
