I decided to come up with my own Pork Roast recipe for a crock pot. I took a few ideas from the other recipes and this is what I came up with.

2 lbs boneless pork loin roast
1 teaspoon paprika
1/2 teaspoon cayenne (red pepper)
1 tablespoon garlic powder
1/2 teaspoon oregano
3/4 teaspoon salt
1/4 teaspoon black pepper
4 medium potatoes, peeled and cubed (1 inch cubes)
2 cups baby carrots
2 cups chicken broth

Steps:

  • Rinse and dry roast.
  • Combine all dry seasonings and rub onto roast.
  • Use olive oil to brown the roast.
  • Deglaze pan with chicken broth.
  • Place potatoes, carrots, and roast into crock pot and set to low for 6 hours.

McCormick's seasoning salt
chili powder
garlic powder
onion powder
black pepper
2 (10 1/2 ounce) cans condensed golden mushroom soup
1 (10 1/2 ounce) can cream of mushroom soup
1 (14 ounce) can beef consomme
1 -2 lb fresh mushrooms (sliced or halved)

Steps:

  • Season pork roast liberally on all sides with seasoning salt, chili powder, garlic powder, and onion powder.
  • Allow the roast to sit for 15-30 minutes so that seasonings and meat get to know each other better.
  • Stir together 1 can of Golden Mushroom soup and cream of mushroom soup and pour into crock pot.
  • Place seasoned pork roast into crock pot atop soup mixture.
  • Pour second can of golden mushroom soup over pork roast.
  • Cover the pork roast with the sliced/halved mushrooms.
  • Pour can of beef consommé over mushrooms.
  • Season mushrooms to taste with salt and black pepper.
  • Cook on low setting for about 8 hours.
  • Remove roast from crock pot (it will be very tender).
  • Use the juices in the crock pot as gravy for the pork roast and mashed potatoes.
  • You can use it just as it is, which is what we do, or adjust it to however you like gravy (e.g. add flour or cornstarch, remove fat, etc).

1 small onion, thinly sliced (optional)
1 cup dried sweetened cranberries (or to taste)
1/2 cup chicken broth
1/2 cup cranberry juice cocktail
2 tablespoons cornstarch

Steps:

  • Sprinkle the sliced onions into a 4-quart crockpot.
  • Pace the roast on top of the onions.
  • In a bowl combine cranberries, broth and 1/4 cup the cranberry juice in a small bowl pour over the roast cover, and cook for 7-9 hours when done, place roast on platter.
  • Cover with foil to keep warm.
  • Pour the juices from crock pot into a medium-size saucepan.
  • Combine remaining 1/4 cup cranberry juice cocktail with the 2 tbsp of cornstarch in a small bowl; mix well add to the juices in the saucepan; cook and stir until thickened and bubbly (about 3 minutes).
  • Serve the sauce with pork roast.

3 ounces pineapple juice
2 tablespoons cider vinegar

1 tablespoon cornstarch
3 teaspoons cold water

Steps:

  • Rub salt and black pepper onto pork loin and place in crock pot. Add all of remaining ingredients EXCEPT cornstarch and water.
  • Turn crock pot on high for 1 hour and then cook on low for 5-6 hours.
  • Mix cornstarch and water in small bowl and add last 15 minutes of cooking time which will help make the gravy.
  • Remove loin onto a serving plate. This recipe will go well with rice, potatoes or noodles.

1 (3 -4 lb) boneless pork shoulder, trimmed (3 to 4 pounds)
1 cup packed brown sugar
1/3 cup unsweetened apple juice (I have used pineapple juice with fabulous results)
1/3 cup soy sauce (may use low sodium)
1 teaspoon fresh ground ginger
1 teaspoon minced garlic
1/2 teaspoon salt
1/4 teaspoon pepper
2 tablespoons cornstarch
3 tablespoons cold water

Steps:

  • Cut roast in half; rub with brown sugar. Place in a 5-qt. slow cooker.
  • Mix together apple juice and soy sauce (and garlic and ginger if using) and pour over roast.
  • Sprinkle with salt and pepper.
  • Cover and cook on low for 6 to 6-1/2 hours or until meat is tender.
  • Remove roast; cover and let stand for 15 minutes.
  • Meanwhile, strain cooking juices and return to slow cooker. Increase temp to high.
  • Combine cornstarch and cold water until smooth; gradually stir into juices in slow cooker.

2 -4 tablespoons caraway seeds
2 sliced green apples
8 small red potatoes

  • Rub roast with salt and pepper.

4 -5 lbs center cut pork roast or 4 -5 lbs end cut pork roast
salt and pepper
1 garlic clove, sliced
2 medium onions, sliced
1 bay leaf
1 cup hot water
2 tablespoons soy sauce

Steps:

  • Rub pork roast with salt and pepper.
  • Make tiny slits in meat and insert slivers of garlic (or just sprinkle on some garlic powder).
  • Place in broiler pan and broil about 15-20 minutes to remove excess fat. Check frequently.(I oftentimes just brown on all sides in frying pan).
  • Mix hot water and soy sauce.
  • Put one sliced onion in bottom of crockpot.
  • Add browned pork roast and remaining onion and other ingredients.
  • Cover and cook on high for 4 or so hours. (This is how long it takes in my Westbend slow cooker). Low setting would probably be 6-8 hours.
  • To thicken gravy: Remove roast to serving platter. Blend 2 tablespoons cornstarch with 2 tablespoons cold water to form a smooth paste. Stir well and let come to a boil. Doesn't get too thick which is how we like it).

1 cup ketchup
1 cup barbecue sauce
1 cup water

  • Place sauerkraut in a 3-1/2 to 4 quart crock pot. Trim fat from meat. If need be, trim the meat to fit in crock pot.

1 large yellow onion (sliced into 3 very thick slices)
1 (14 ounce) can sauerkraut
1/2 cup chicken broth
2/3 cup Saucy Susan peach apricot sauce

1 bell pepper, diced (I like to use red or yellow)

6 -8 potatoes
3 tablespoons butter

1/2 teaspoon salt

1 boneless pork loin roast (roughly 4 lbs.)
2 tablespoons cornstarch
2 tablespoons cold water

Steps:

  • Peel potatoes and slice them into 1/4" rounds. Place them in the bottom of your crock pot.
  • Finely chop the remainder of the vegetables. In a large skillet, saute the vegetables in butter until tender.
  • Add the garlic; cook 1 minute longer. Stir in pepper sauce and all seasonings but the bay leaves.
  • Cut deep slits in roast and place in crock pot on top of the potatoes slit side up.
  • Spoon vegetable mixture into slits and over the top of the roast. Add bay leaves to the crock pot.
  • Cover and cook on low for 6-8 hours or until the pork is tender.
  • Transfer roast to a serving platter. Using a slotted spoon, remove potatoes and place them around the roast on the platter. Cover platter with foil to keep the roast and potatoes warm.
  • If bay leaves are still in the crock pot, remove them. Pour juices into a small saucepan. Combine cornstarch and water until smooth; stir into the pan.
  • Bring to a boil; cook and stir for two minutes until liquid has thickened.
  • Serve gravy with roast and potatoes.

SPICY CITRUS PORK ROAST (CROCK POT)

This pork roast is a non-traditional twist on Mexican cooking from a book by Judith Finlayson. My husband, who grew up in Mexico, says it is his new favorite recipe! It took about 40 minutes to get this all in the crock pot in the morning, but that included all the roast preparation and vegetable dicing. If you trimmed your roast the night before and sliced the onions, bacon, & peppers, that would save some time in the morning. Serve with rice. We ate leftovers the next day on tortillas with guacamole & lettuce.

4 slices bacon, chopped
3 lbs boneless pork shoulder, trimmed of excess fat
2 medium onions, thinly sliced
3 garlic cloves, minced
1 jalapeno pepper, finely chopped
1 1/2 tablespoons chili powder
1 teaspoon salt
1 teaspoon cracked black peppercorns (or coarsely ground pepper)
1/4 cup flour
1 tablespoon orange zest
1 1/2 cups orange juice
2 bananas, peeled and thinly sliced

Steps:

  • Cook bacon until crisp in a skillet over medium high heat. Remove bacon pieces from skillet and set aside, leaving fat in skillet.
  • In same pan, brown roast on all sides. Transfer to slow cooker.
  • Remove all but 1 TB of bacon fat from pan. Reduce heat to medium. Add onions and cook, stirring, until slightly wilted.
  • Add garlic, jalapeno, chili powder, salt, and pepper and cook, stirring, for 1 minute.
  • Sprinkle in flour and cook, stirring, one more minute.
  • Add orange zest, juice, and bananas, and cook, stirring to scrape up any bits stuck to the skillet. Mash bananas into sauce as you stir (but it's OK if some chunks/slices remain - these will disintegrate during the slow cooking).
  • Stir in bacon pieces. Pour contents of skillet over pork.
  • Cover and cook on low for 8 hours. Note that the original recipe indicated that this could be cooked on high for 4-5 hours, but I'm afraid that my slow cooker would burn this due to the high sugar content of the fruit. You can use your judgment based on your knowledge of your slow cooker - I needed to save some time so I started on high for 1 hour and switched to low for 4 1/2 hours and it turned out perfectly.

2 medium onions
1 tablespoon garlic (minced)
1 tablespoon garlic powder
1 (10 ounce) bottle marinade (Badia, Mojo)
1/3 cup water
4 cups cooked white rice

Steps:

  • Trim all external fat from pork roast.
  • Slice onions to about 1/8 inch thick slices and place in bottom of crock pot.
  • Rub pork roast with garlic powder on all sides and place on top of onions.
  • Mix 5 ounces of marinade with 1/3 cup of water and pour around roast.
  • Spread minced garlic evenly over top of roast.

1 1/2 to 2 lb pork loin roast
6 to 8 slice bacon, uncooked (more or less, depending on size of bacon slices)
salt and pepper to taste

Steps:

  • 1. Wash pork roast and pat dry. Add salt and pepper to taste. Wrap pork roast in uncooked bacon slices, securing underneath the roast. Cook in crockpot on low heat for about 5 to 6 hours or until bacon is cooked and roast is tender. Transfer to serving platter.
  • 2. Pour broth into a sauce pan and bring to a boil. Thicken using about 2 teaspoons of cornstarch mixed with enough milk to make a pourable paste. Add cornstarch mixture to broth a little at a time, whisking constantly. If mixture seems too thin, you may add a little more cornstarch. If too thick, pour in a little milk or water. Continue cooking and whisking until consistency is correct. You may also add salt and pepper to taste.
  • 3. Slice roast and serve with gravy.
