PORK WITH PRUNES

Yield Makes 4 servings

Number Of Ingredients 10

2 pounds (1/2-inch-thick) pork shoulder chops
1/2 teaspoon salt
1/4 cup all-purpose flour
3 tablespoons vegetable or olive oil
3/4 cup chopped shallot (4 1/2 ounces)
1/2 cup cider vinegar
3 cups water
1 3/4 cups low-sodium chicken broth
1 teaspoon whole allspice
1 1/2 cups dried pitted prunes (11 ounces)

Steps:

  • Preheat oven to 350°F.
  • Pat chops dry and season with salt. Dredge in flour, shaking off excess. Heat oil in a 3 1/2- to 4-quart wide heavy pot over moderately high heat until hot but not smoking. Brown chops in batches, turning over once, about 5 minutes per batch. Transfer to a plate. Add shallot to pot and sauté until golden, 2 to 3 minutes. Add vinegar and boil, scraping up brown bits, until reduced by half. Stir in water, broth, and allspice and bring to a simmer. Return chops to pot with prunes. Braise, covered, in middle of oven until chops are very tender, about 45 minutes. Transfer to a platter using a slotted spoon. Boil sauce until reduced to 1 cup, about 20 minutes. Season with salt and pepper and pour over chops.

Tips:

  • Choose the right pork chops: Bone-in pork chops will add more flavor to the dish than boneless chops. Look for chops that are about 1-inch thick and have a good amount of marbling.
  • Brown the pork chops before cooking them in the slow cooker: This will help to seal in the juices and give the chops a nice golden color.
  • Use a variety of dried fruits: Apricots and prunes are a classic combination, but you can also use raisins, cranberries, or cherries. If you're using a tart fruit, like cranberries, you may want to add a little bit of sugar to the dish.
  • Add some spices to the dish: A little bit of cinnamon, nutmeg, or ginger can add a lot of flavor to the pork chops. You can also use a pre-made spice blend, such as pumpkin pie spice or apple pie spice.
  • Cook the pork chops on low for 6-8 hours: This will give the chops time to become tender and fall-apart. If you're short on time, you can cook the chops on high for 3-4 hours, but they may not be as tender.

Conclusion:

Crock-Pot Pork Chops with Apricots and Prunes is a delicious and easy-to-make dish that's perfect for a weeknight meal. The pork chops are tender and flavorful, and the dried fruits add a sweet and tangy flavor. This dish is also a great way to use up leftover pork chops. Serve with mashed potatoes, rice, or your favorite side dish.
