CROCK POT PEPPER STEAK & ONIONS

Crock Pot Pepper Steak & Onions image

My version of Pepper Steak, compiled from several different recipes on the web and adjusted to taste and what I had in the fridge! This is a "runnier" version as opposed to a thicker sauce, it's great for dunking! Nice winter comfort food on a cold day.

Time 8h20m

Yield 6 serving(s)

Number Of Ingredients 13

2 lbs beef sirloin, cut into 2 inch strips
garlic powder (to taste)
3 tablespoons vegetable oil
1 beef bouillon cube
1/4 cup hot water
1 tablespoon cornstarch
1/2 teaspoon red pepper flakes
1/2 cup onion, chopped
2 large green bell peppers, roughly chopped
1 (14 1/2 ounce) can stewed tomatoes, with liquid
3 tablespoons soy sauce
1 teaspoon white sugar
1 teaspoon salt

Steps:

  • Sprinkle strips of sirloin with garlic powder to taste.
  • Heat vegetable oil in a large skillet over medium heat, brown beef strips.
  • Transfer beef to crock pot.
  • Crush and mix bouillon cube with hot water until dissolved, then stir in cornstarch until dissolved.
  • Pour into the crock pot with meat.
  • Add red pepper flakes, onion, green peppers, stewed tomatoes, soy sauce, sugar, and salt.
  • Cover, and cook on High for 3 to 4 hours, or on low for 6 to 8 hours.
  • ** If you would like to thicken the sauce for gravy, mix 1 TBS cornstarch with some water and stir into crock pot 1/2 hour before complete cooking time.

Tips:

  • Choose the right cut of beef: Sirloin, flank, or skirt steak are all good choices for crock pot pepper steak. These cuts are relatively inexpensive and have a good amount of marbling, which will help keep the meat moist and flavorful during cooking.
  • Tenderize the beef: To make the beef even more tender, you can pound it with a meat mallet or marinate it in a mixture of soy sauce, Worcestershire sauce, and olive oil for at least 30 minutes before cooking.
  • Brown the beef: Browning the beef before adding it to the crock pot will help to develop its flavor and prevent it from becoming tough. You can brown the beef in a skillet over medium-high heat for a few minutes per side, or you can use the sauté function on your crock pot.
  • Use a good quality crock pot: A good quality crock pot will cook the beef evenly and prevent it from drying out. Look for a crock pot with a tight-fitting lid and a programmable timer.
  • Don't overcook the beef: Overcooked beef will be tough and chewy. Cook the beef on low for 6-8 hours, or on high for 3-4 hours, or until the beef is fall-apart tender.

Conclusion:

Crock pot pepper steak is a delicious and easy meal that is perfect for a busy weeknight dinner. Simply brown the beef, add it to the crock pot with the other ingredients, and cook until the beef is fall-apart tender. Serve over rice, noodles, or mashed potatoes.
