Categories     Lunch/Snacks

Time 8h15m

Yield 4 serving(s)

Number Of Ingredients 9

4 large vidalia onions or 4 large sweet onions, very thinly sliced
2 (1/4-1/2 cup) ounces unsalted butter
3 cups beef stock
1 cup dry white wine
1/4 cup medium-dry sherry
1 teaspoon reduced-sodium Worcestershire sauce
1 clove garlic, minced
4 slices French bread, buttered
1/2-3/4 cup romano cheese or 1/2-3/4 cup parmesan cheese, shredded

Steps:

  • Using a large frying pan, slowly sauté the onions in butter until limp and glazed.
  • Transfer to crock-pot.
  • Add beef stock, white wine, sherry, Worcestershire and garlic.
  • Cover and cook on low for 6 to 8 hours.
  • Place French bread on a baking sheet.
  • Sprinkle generously with cheese.
  • Place under preheated broiler until lightly toasted.
  • To serve, ladle soup into bowl.
  • Float a slice of toasted French bread on top of each bowl.

Tips:

  • Choose the right onions: Yellow onions are the most commonly used for French onion soup, but you can also use white or sweet onions. If you're using sweet onions, you may want to reduce the amount of sugar in the recipe.
  • Slice the onions thinly: This will help them caramelize more evenly.
  • Caramelize the onions slowly and patiently: This is the key step in making a great French onion soup. Don't rush the process, or the onions won't have time to develop their full flavor.
  • Use a good quality broth: The broth is the base of the soup, so it's important to use a good quality one. Look for a broth that is low in sodium and has a rich flavor.
  • Add a splash of white wine: This will help to brighten the flavor of the soup.
  • Use a variety of cheeses: A combination of Gruyère, Parmesan, and Swiss cheese is classic, but you can also use other types of cheese, such as fontina, mozzarella, or provolone.
  • Serve the soup with a baguette or croutons: This will help to soak up the delicious broth.

Conclusion:

French onion soup is a classic dish that is perfect for a cold winter day. It's easy to make and can be tailored to your own taste. So next time you're looking for a comforting and delicious meal, give French onion soup a try. You won't be disappointed!
