Cheesy Potato Casserole (Crockpot) image

This recipe is different than the usual Cheesy Potato Casserole, it has stuffing on top for the crunch! I know that might sound weird but it is really good. I even make this into a complete meal instead of a side dish. I hope that you enjoy!!

Time 4h10m

Yield 1 crockpot, 8 serving(s)

Number Of Ingredients 9

2 (16 ounce) packages frozen hash browns (with or without peppers) or 2 (16 ounce) packages cubed potatoes
1 (10 ounce) can cream of chicken soup
1 (8 ounce) sour cream
1 small onions, diced or 1 tablespoon onion flakes
1/4 cup butter, plus
3 tablespoons butter, melted, divided
2 cups shredded cheddar cheese
1 1/2-2 cups herb seasoned stuffing mix (can use chicken or other)
season salt (to taste)

Steps:

  • Lightly butter the inside of your crockpot.
  • Combine soup, sour cream, onion, 1/4 c butter and seasonings in crock pot.
  • Add potatoes and cheese, mix well.
  • Cover mixture with dry stuffing mix and drizzle with the remaining 3 T of butter.
  • cook on low for 4-6 hours or on high for 2 hours. Do NOT stir while cooking.
  • * You can make a complete meal by adding cubed ham, frozen mixed veggies, and an extra can of soup.

Tips:

  • Choose the right potatoes: For a creamy and smooth casserole, use starchy potatoes like Yukon Gold or Russet potatoes. These potatoes will break down and thicken the sauce, creating a velvety texture.
  • Shred the potatoes evenly: To ensure even cooking, use a box grater or food processor to shred the potatoes. This will help them cook evenly and prevent some pieces from becoming overcooked while others remain undercooked.
  • Use a flavorful cheese blend: For a nacho-flavored casserole, use a blend of cheddar cheese, Monterey Jack cheese, and pepper Jack cheese. You can also add a bit of queso Oaxaca or queso fresco for a more authentic Mexican flavor.
  • Don't overcook the potatoes: Overcooked potatoes will become mushy and lose their texture. Cook them just until they are tender, about 15-20 minutes.
  • Add toppings before serving: Top the casserole with your favorite nacho toppings before serving. This could include shredded chicken, ground beef, diced tomatoes, sliced jalapeƱos, sour cream, guacamole, or salsa.

Conclusion:

This Crock-Pot Nacho Cheese Potato Casserole is a delicious and easy dish that is perfect for a party or potluck. The creamy potato casserole is topped with a flavorful nacho cheese sauce and your favorite nacho toppings. It's a cheesy, gooey, and flavorful dish that is sure to be a hit with everyone who tries it. So next time you're looking for a quick and easy side dish, give this Crock-Pot Nacho Cheese Potato Casserole a try. You won't be disappointed!
