Time 3h10m

Yield 8 serving(s)

Number Of Ingredients 10

2 tablespoons butter
1 1/2 lbs chicken tenders, cut into 1/2 inch pieces
1 small onion, chopped
2 celery ribs, chopped
2 large carrots, chopped
2 cups frozen corn or 2 cups canned corn
2 (10 3/4 ounce) cans cream of celery soup or 2 (10 3/4 ounce) cans cream of chicken soup
1 1/2 cups chicken broth
1 teaspoon dried dill
1/2 cup half-and-half (can use milk)

Steps:

  • Note:.
  • I use pre-cooked or frozen chicken, I boil the onion, celery, and carrots first(not the corn) and then throw them in the crock-pot.If I am cooking the chicken tenders, I throw the veggies in the pan afterwards, and saute. If the veggies and chicken are pre-cooked, you only have to wait until soup is fully heated.
  • Melt butter in large skillet.
  • Add chicken and cook until browned.
  • Add cooked chicken, onions, celery, carrots, corn, soup, chicken broth, and dill to your slow cooker.
  • cover and cook on low 3 to 4 hours or until chicken is no longer pink and vegetables are tender.
  • Turn off heat.
  • Stir in half and half.

Tips:

  • Use a variety of vegetables. This will add flavor, texture, and nutrients to your chowder. Some good choices include corn, black beans, bell peppers, and zucchini.
  • Use a flavorful broth. Chicken broth is a good option, but you can also use vegetable broth or a combination of the two. You can also add some spices to the broth, such as cumin, chili powder, or paprika.
  • Cook the chicken thoroughly. Chicken should be cooked to an internal temperature of 165 degrees Fahrenheit.
  • Don't overcook the vegetables. Vegetables should be cooked until they are tender but still have a little bit of crunch.
  • Serve the chowder with your favorite toppings. Some good choices include sour cream, shredded cheese, and tortilla chips.

Conclusion:

Crock-Pot Mexican chicken chowder is a delicious and easy-to-make meal that is perfect for a busy weeknight. It is also a great way to use up leftover chicken. This chowder is packed with flavor and is sure to be a hit with your family and friends. So next time you are looking for a quick and easy meal, give this crock-Pot Mexican chicken chowder a try.
