CROCK-POT MEATLOAF AND PACKET POTATOES
This is a nice, classic meatloaf cooked in the crockpot with a packet of golden potatoes cooked right on the top. Just add a veggie and you have a complete, easy meal. My measurements are approx. because I don't measure anything when I'm cooking.

Steps:
- In a large bowl combine all ingredients except potatoes, second amount of seasoned salt and olive oil. Mix thoroughly and pat into the bottom of your crock. I just level mine out, covering the entire bottom of the crock. Then, take a large piece of aluminum foil and place the diced potatoes, drizzle with olive oil and season with seasoned salt. Then, fold the aluminum foil into a nice packet and place on top of the meatloaf.
- Cook on High for 3 to 4 hours until done.
- I serve this as is with ketchup on the side because that is the way we like it. Feel free to top with tomato sauce or gravy.
Tips:
- If you don't have a slow cooker, you can cook this meatloaf in a regular oven at 350°F for 1 hour and 15 minutes, or until a meat thermometer inserted into the center reads 160°F.
- You can use any type of ground meat for this recipe, such as beef, pork, or turkey.
- If you don't have bread crumbs, you can use crushed crackers or rolled oats instead.
- You can add other vegetables to this recipe, such as chopped carrots, celery, or onions.
- If you want a more flavorful meatloaf, you can add 1/2 cup of grated Parmesan cheese or 1/4 cup of crumbled blue cheese to the meatloaf mixture.
- Serve this meatloaf with mashed potatoes, roasted vegetables, or a side salad.
Conclusion:
This Crock-Pot Meatloaf and Potatoes recipe is an easy and delicious way to make a classic comfort food dish. The meatloaf is cooked slowly in a flavorful sauce, and the potatoes are cooked until they are tender and fluffy. This dish is perfect for a weeknight dinner or a special occasion.
