2 cups uncooked elbow macaroni
1 (12 ounce) can reduced-fat evaporated milk
1 1/2 cups nonfat milk
1/3 cup egg substitute
1 tablespoon butter, melted
8 ounces Velveeta reduced fat cheese product, cubed
2 cups shredded sharp cheddar cheese, divided

Steps:

  • Cook macaroni according to package directions; drain and rinse in cold water. In a large bowl, combine the evaporated milk, milk, egg substitute and butter. Stir in the process cheese, 1-1/2 cups sharp cheddar cheese and macaroni.
  • Transfer to a 3-qt. slow cooker coated with nonstick cooking spray. Cover and cook on low for 2-3/4 to 3 hours or until center is set, stirring once. Sprinkle with remaining sharp cheddar cheese.

This is my kids favorite homemade version of mac and cheese. It does contain canned soup. If you're not a fan - don't try it! This freezes and reheats really well. I usually double this on a cooking day and it fills my 6 quart crock pot to the brim.

1 lb macaroni noodles
10 ounces condensed cheddar cheese soup
8 ounces sharp cheddar cheese, shredded
8 ounces extra-sharp cheddar cheese, shredded
12 ounces evaporated milk
1 cup milk

Steps:

  • Cook macaroni noodles according to package directions. Drain. ( I usually slightly undercook them - until barely al dente).
  • While noodles are cooking, combine soup, cheeses and milks in a crockpot. Stir to combine.
  • Add cooked, drained noodles and stir well.
  • Cover and cook on low for 3 hours.
  • To Freeze:.
  • Cool completely. Place in freezer bags in desired serving sizes. I usually do about 3 cups per bag. Enough for lunches, etc.
  • Seal and freeze.
  • To Serve:.
  • Thaw in fridge. Reheat in microwave or place in baking dish that has been coated with cooking spray. Bake at 350 degrees for 20-25 minutes or until hot.

12 -16 ounces elbow macaroni
12 ounces evaporated milk
1 1/2 cups milk
5 cups shredded cheddar cheese
1 teaspoon salt
pepper
1 dash cayenne (optional)

Steps:

  • Turn on crock pot to allow to heat.
  • Spray Crock pot with non stick cooking spray.
  • Cook elbow macaroni per box directions, drain and place in mixing bowl.
  • Add ALL remaining ingredients (with hold 1/2 cup cheese for top).
  • Mix well.(you may have to add a little more milk to completely cover the macaroni).
  • Place all into crockpot.
  • Top with remaining cheese and cover.
  • Cook on high for approximately 3 - 4 hours.
  • Reduce to low and continue cooking until ready to serve.

2 cups uncooked elbow macaroni (an 8-ounce box isn't quite 2 cups)
4 tablespoons (1/2 stick) butter, cut into pieces
2 1/2 cups (about 10 ounces) grated sharp Cheddar cheese
3 eggs, beaten
1/2 cup sour cream
1 (10 3/4-ounce) can condensed Cheddar cheese soup
1/2 teaspoon salt
1 cup whole milk or half and half
1/2 teaspoon dry mustard
1/2 teaspoon black pepper

Steps:

  • Instructions 1.Boil the macaroni in a 2 quart saucepan in plenty of water until al dente, about 7 minutes. Drain. 2.In a medium saucepan, mix butter and cheese. Stir until the cheese melts. 3.In a slow cooker, combine cheese/butter mixture and add the eggs, sour cream, soup, salt, milk, mustard and pepper and stir well. 4.Add drained macaroni and stir again. 5.Set the slow cooker on LOW setting and cook for 2.5 to 3 hours, stirring occasionally. Note: be sure to stir the macaroni and cheese a few times so that the cheese mixture stays creamy and does not stick/harden.

8 oz elbow macaroni (uncooked)
1 (12 oz) can(s) evaporated milk
1 tsp salt
3 c grated sharp cheddar cheese
2 eggs, beaten
1 stick butter, melted
CRUMB TOPPING:
1/2 c dry bread crumbs
1 Tbsp butter, melted

Steps:

  • 1. Cook the macaroni according to package directions until almost tender.
  • 2. Mix the cooked macaroni with all the remaining ingredients (except 1/2 cup of the cheddar cheese) in a large bowl. Pour mixture into a well greased crock pot.
  • 3. Sprinkle remaining cheese on top.
  • 4. Cook with the crock pot set on low for 3 hours. DO NOT COOK ANY LONGER THAN 3 HOURS OR YOUR MACARONI WILL BECOME DRY AND STICKY.
  • 5. To make the topping, melt 1 Tablespoon butter and mix in with the dry bread crumbs. When ready to serve, sprinkle topping onto the macaroni and enjoy !!
