Time 3h20m

Number Of Ingredients 14

1 tablespoon extra-virgin olive oil
2 pounds boneless skinless chicken breasts (or thighs)
1/2 teaspoon kosher salt
1/4 teaspoon ground black pepper
1 jar roasted red peppers ((12 ounces), drained and chopped)
1 cup kalamata olives (drained)
1 medium red onion (cut into 1/2-inch chunks)
3 tablespoons red wine vinegar
1 tablespoon minced garlic (from about 3 large cloves)
1 teaspoon honey
1 teaspoon dried oregano
1 teaspoon dried thyme leaves
1/2 cup feta cheese (optional for serving)
Chopped fresh herbs: any mix of basil (parsley, or thyme, optional for serving (I used fresh thyme))

Steps:

  • Lightly coat a 5-quart or larger slow cooker with nonstick spray. Heat the oil in a large skillet over medium high. Sprinkle the chicken with salt and pepper, then place it in the hot pan, seasoned side down. Let brown on the first side for 1 to 2 minutes until golden, then flip and brown on the other side for 1 additional minute. If your skillet isn't large enough to fit all of the chicken pieces, work in batches so that the chicken does not overlap. Transfer the chicken to the slow cooker.
  • Arrange the peppers, olives, and onions around the chicken (do not place on top).
  • In a small bowl or measuring cup, whisk together the red wine vinegar, garlic, honey, oregano, and thyme. Pour over the chicken and vegetables. Cover and cook for 1 1/2 to 2 hours on high or 3 to 4 hours on low, until the chicken is cooked through and the center reaches 165 degrees F. Serve warm, sprinkled with feta and fresh herbs.

CROCK POT CHICKEN - GREEK STYLE

Crock Pot Chicken - Greek Style image

I'm not Greek, but love the food. This is my take on one of their dishes. UPDATE: After the first two reviews of chicken being a little dry (perhaps breasts too thin), I suggest stacking dinner as follows in the directions:

Provided by Happy Harry 2

Categories     Poultry

Time 5h20m

Yield 4-6 serving(s)

Number Of Ingredients 10

2 -3 boneless skinless chicken breasts, quartered
5 medium potatoes, unpeeled, quartered
2 large onions, thickly sliced
1 whole bulb of garlic, minced
3 -4 teaspoons dried oregano
3/4 teaspoon sea salt
1/2 teaspoon fresh pepper
2 1/2 teaspoons extra virgin olive oil
3 tablespoons water
1 tablespoon fresh lemon juice

Steps:

  • Night before dinner, place potatoes in large Ziploc bag with olive oil and toss well. (You can skip this if you really need to and put oil on top after the seasonings.).
  • Rinse chicken in cold water and shake off excess water but don't dry. Place in bowl with garlic (yes, the ingredients were right, bulb, not clove) and oregano and toss.
  • Put potatoes on bottom of cooker. Add chicken, followed by the onions. Add water and lemon juice. Sprinkle with seasonings.
  • Cook on high 5-6 hours or low 8-9 hours.

Tips:

  • Use a variety of fresh herbs and spices to enhance the flavor of the chicken. Some good choices include oregano, thyme, rosemary, and garlic.
  • Don't be afraid to experiment with different types of citrus fruits. Lemons are the traditional choice, but oranges, grapefruits, and limes can also be used.
  • If you don't have a crock pot, you can also cook this recipe in a slow cooker or Dutch oven.
  • Serve the chicken with rice, potatoes, or vegetables. You can also add a side of tzatziki sauce or hummus.

Conclusion:

Crock Pot Lemon Oregano Greek Chicken is a delicious and easy-to-make dish that is perfect for a weeknight meal. The chicken is cooked in a flavorful broth made with lemon, oregano, and garlic, and it is fall-off-the-bone tender. Serve the chicken with your favorite sides, and enjoy!
