Tips:

  • Use boneless, skinless chicken breasts or thighs for a leaner dish. If you prefer dark meat, chicken thighs are a good option.
  • Trim any excess fat from the chicken before cooking to reduce calories.
  • Use fresh lemon juice for the best flavor. Bottled lemon juice can be used, but it won't have the same bright, citrusy taste.
  • Add a tablespoon of minced garlic to the chicken for extra flavor.
  • Use a slow cooker liner to make cleanup easier. Simply lift the liner out of the slow cooker when you're finished cooking and discard it.
  • Serve the chicken with your favorite sides, such as mashed potatoes, roasted vegetables, or rice.

Conclusion:

This Crock-Pot Lemon Garlic Chicken with Wild Rice is an easy and delicious weeknight meal. It's also a great option for potlucks and parties. The chicken is cooked to perfection in a flavorful lemon garlic sauce, and the wild rice adds a nutty flavor and texture. You can easily adjust the recipe to your liking, adding more or less garlic, lemon juice, or herbs. You can also use different types of rice, such as brown rice or jasmine rice.
