1 lb boneless skinless chicken breast, lightly pounded (3 to 4 ounces meat per person)
kosher salt
fresh ground black pepper
8 garlic cloves, smashed
1 cup wild rice
1/4 cup fresh squeezed lemon juice
2 1/4 cups water
10 sprigs fresh parsley

Steps:

  • Season the chicken breasts generously with salt and pepper.
  • Place the chicken breasts in the bottom of a slow cooker.

I think this originally came from a cooking show, but I changed it to suit my taste, by adding more lemon juice & more garlic. Also the recipe just says chicken breasts, but I have also used skinless chicken pieces.

1 lb boneless skinless chicken breast, lightly pounded (I have read in some crock pot recipes that people start with frozen meat to keep it tender. I haven')
1 teaspoon salt, to taste
fresh ground black pepper, to taste
10 garlic cloves, smashed
1 cup wild rice
1/2 cup fresh squeezed lemon juice
2 cups water

  • Season the chicken breasts with salt and pepper.
  • (I use more pepper than salt, but that's my preference).

2 lbs chicken breast halves, skin and fat removed
1 teaspoon dried oregano leaves, crushed
1/2 teaspoon seasoning salt
1/4 teaspoon pepper
2 tablespoons butter
1/4 cup water
3 tablespoons lemon juice
2 garlic cloves, minced
1 teaspoon chicken bouillon granule
1 teaspoon minced fresh parsley

Steps:

  • Mix oregano, seasoned salt and pepper; rub into chicken.
  • Brown chicken then transfer to a slow cooker.
  • Place water, lemon juice, garlic and bouillon granules in skillet.
  • Bring to a boil, loosening browned bits from bottom of skillet.
