CROCK POT LEMON GARLIC CHICKEN WITH WILD RICE

Crock Pot Lemon Garlic Chicken With Wild Rice image

I think this originally came from a cooking show, but I changed it to suit my taste, by adding more lemon juice & more garlic. Also the recipe just says chicken breasts, but I have also used skinless chicken pieces.

Provided by MrsSPheonix

Categories     Chicken Breast

Time 8h10m

Yield 4 serving(s)

Number Of Ingredients 7

1 lb boneless skinless chicken breast, lightly pounded (I have read in some crock pot recipes that people start with frozen meat to keep it tender. I haven')
1 teaspoon salt, to taste
fresh ground black pepper, to taste
10 garlic cloves, smashed
1 cup wild rice
1/2 cup fresh squeezed lemon juice
2 cups water

Steps:

  • Season the chicken breasts with salt and pepper.
  • (I use more pepper than salt, but that's my preference).
  • Place the chicken breasts in the bottom of a slow cooker.
  • Add the garlic and rice.
  • Add the lemon juice to the water and stir.
  • Pour this mixture over the rice and chicken.
  • Stir once to coat.
  • Place the lid on the slow cooker and set on low for 8 hours.

Tips:

  • Use boneless, skinless chicken breasts or thighs: This will ensure that the chicken cooks evenly and quickly.
  • Slice the chicken into 1-inch pieces: This will help the chicken to cook more evenly and absorb the flavors of the marinade better.
  • Use a flavorful marinade: The marinade will help to tenderize the chicken and add flavor. Be sure to use a marinade that contains acidic ingredients, such as lemon juice or vinegar, as this will help to break down the proteins in the chicken.
  • Cook the chicken on low heat: This will help to prevent the chicken from drying out. Cook the chicken for 4-6 hours on low heat, or until it is cooked through.
  • Serve the chicken over rice: This is a classic way to serve chicken with lemon sauce. You can also serve the chicken with pasta, potatoes, or vegetables.

Conclusion:

This crock pot lemon chicken with rice is an easy and delicious meal that is perfect for busy weeknights. The chicken is tender and flavorful, and the lemon sauce is tangy and refreshing. Serve this dish over rice or your favorite side dish for a complete meal.
