1 zucchini, sliced
1 cup frozen corn or 1 cup fresh corn
1 cup frozen peas or 1 cup fresh peas
2 1/2 cups tomato sauce
1/4 cup low sodium soy sauce or 1/4 cup soy sauce

2 tablespoons parsley flakes

Steps:

  • Layer vegetables in crock pot in order given.
  • Mix together ingredients for sauce and pour over vegetables.
  • Cook 12 hours on low or 6 hours on high.

Tips:

  • Prep ahead: For maximum convenience, chop and prepare your vegetables and marinate the chicken the night before.
  • Layer wisely: To ensure even cooking, place the slower-cooking ingredients (like root vegetables) on the bottom and the quicker-cooking ones (like chicken and zucchini) on top.
  • Don't overcrowd the crock pot: Leave some space between the ingredients to allow for proper heat circulation and even cooking.
  • Use low and slow cooking: The low and slow cooking method allows the flavors to meld and develop, resulting in a tender and flavorful dish.
  • Add moisture: If the recipe doesn't call for liquid, consider adding a cup of broth or water to prevent the dish from drying out.

Conclusion:

The Crock-Pot Layered Dinner is a versatile and convenient recipe that's perfect for busy weeknights or effortless entertaining. With its simple layering technique and minimal prep work, this dish delivers maximum flavor and satisfaction.
