2 pounds of chicken tenderloins
One 16-ounce can of pineapple slices, drained (retain 1/3 cup of liquid)
One 15-ounce can of mandarin oranges, drained (retain 1/3 cup of liquid)
1/4 cup of brown sugar
2 tablespoons of cornstarch
2 tablespoons of lemon juice
1/4 teaspoon of ground ginger
1/2 teaspoon of salt
1/4 teaspoon of pepper

Steps:

  • Spray the inside of the slow cooker with nonstick cooking spray.
  • In a medium-size mixing bowl, combine the brown sugar, lemon juice, liquid from can of pineapple and mandarin oranges, ginger, salt, and pepper. Stir until well mixed.
  • Add the cornstarch to the mixture and whisk until it is mixed.
  • Place the chicken inside the Crock Pot. Top the chicken with the mandarin oranges and pineapple slices.

1/3 cup low sodium soy sauce
2 tablespoons lime juice
1/4 cup orange juice
1 tablespoon lime zest
2 tablespoons sesame oil
1 20 oz can pineapple chunks (do NOT drain)
1 red bell pepper (cut into 1-inch chunks)
1 yellow bell pepper (cut into 1-inch chunks)
1 tablespoon garlic (minced)
1 tablespoon ginger (grated)
1/3 cup brown sugar
1/3 cup hoisin sauce
1 teaspoon red pepper flakes (optional)
4 tablespoons orange juice
2 tablespoons cornstarch
4 green onions sliced
Sesame seeds
Slivered almonds

Steps:

  • Place a large skillet over high-heat and add some oil, once hot, sear the chicken pieces until browned.
  • Place the thighs in the crockpot.
  • Add the rest of the ingredients on top.

4 green onions
3 tablespoons butter
4 chicken breast halves
flour, seasoned with
salt and pepper
1 (14 ounce) can sliced pineapple
1 avocado
rice, hot, buttered

Steps:

  • Chop onions using only 1" of green tops.
  • Saute in 1 tablespoons.
  • of butter until glazed.
  • Transfer to crock pot.
  • Coat chicken breasts in seasoned flour.
  • Saute in butter until brown on both sides.
  • Transfer to crock pot.
  • Drain pineapple, pour juice over chicken.
  • Cover and cook on low 3 to 4 hours (high 1 1/2 to 2 hours) or until breasts are tender.
