Last year I posted this recipe from another Weight Watchers member at a meeting. With the helpful comments from other 'Zaar' members, I made some adjustments. If you like cabbage rolls but not the work of making them, this is a perfect recipe for you. There is a similar recipe posted on the 'Zaar', but this one has a few differences and is worth the try.

6 cups shredded cabbage or 6 cups packaged coleslaw mix
1 lb 95% lean ground beef
1 cup onion, chopped
1/2-1 teaspoon garlic salt
1 -2 teaspoon mixed Italian spices
1/4 teaspoon black pepper
1 cup uncooked rice
1 (25 ounce) can light spaghetti sauce
1 1/2 cups water
1 (28 ounce) can crushed tomatoes (if you like a little more spice substitute 1 10 oz. can diced tomatoes with chilies and 1 14 oz. can)
1/4 teaspoon basil
1/4 teaspoon seasoning salt

Steps:

  • Place 3 cups or 1/2 bag of cabbage in bottom of crock pot.
  • Brown beef with onions, garlic salt, and Italian mixed spices in non-stick skillet and drain.
  • Put beef on top of cabbage, and then do the same with the rice.
  • Top with remaining cabbage, and sprinkle with salt and pepper.
  • Combine spaghetti sauce, water, tomatoes, basil, and seasoned salt in a bowl.
  • Pour sauce mixture over top of cabbage.
  • Cover and cook on HIGH for 4 to 5 hours.
  • Makes 6 servings with each serving size being 1 1/4 heaping cups.
  • For all Weight Watchers folks, this is 4 points per serving and is very filling.

1 large onion, sliced
4 large potatoes, peeled and sliced
1 (10 ounce) can cream of mushroom soup
0.5 (10 ounce) can milk (soup can)

Steps:

  • Spray crock pot with non stick vegetable spray.
  • Layer potatoes, onions and hamburger until all is used, sprinkling each layer very lightly with salt and pepper.
  • Mix soup and milk together and pour over top.
  • Cook 3 to 4 hours on high.

The cookbook contains recipes from active parents and teachers of Roosevelt Elementary School, Mankato, MN. It is where I went to school, and my family submitted all of our family favorites for it. So, we probably have 10 copies of the book in our house!

2 large potatoes, pared and sliced
2 -3 medium carrots, sliced
1 (10 ounce) package frozen peas, partially thawed
2 medium onions, sliced
salt, to taste
pepper, to taste
2 stalks celery, sliced
1 1/2 lbs lean ground beef, browned and drained
1 (10 3/4 ounce) can tomato soup
1/2 cup water

Steps:

  • Place layer of vegetables in crock pot in the order given.
  • Season each layer with salt and pepper.
  • Put lightly browned ground beef on top of the celery.
  • Mix the tomato soup with the water and pour into crock pot.
  • Cover and cook on low 6 to 8 hours (high 3 to 4 hours), stirring occasionally.

7 -8 small potatoes
1/2 large onion, sliced

3/4 cup milk

3 cups corn chips
1 medium onion, chopped
1 (10 1/2 ounce) can cream of mushroom soup
1 (10 ounce) can Rotel Tomatoes
2 cups grated cheese

  • Brown ground beef and drain off fat. Mix well with mushroom soup and rotel tomatoes.
  • Line bottom of slow cooker with 1 cup of corn chips. Add 1/3 of onion, sprinkle with 1/3 of grated cheese and add 1/3 of meat mixture. Repeat layers, cover and cook on low 6-8 hours or on high 3 hours.
  • You may also bake in a casserole at 325 degrees for 45 minutes.
