I had planned to make a crock pot dish with chicken and broccoli. I had assembled all the ingredients and went to the freezer - yikes! No broccoli! Not even any spinach! Time 7h20m

Number Of Ingredients 11

2 lb boneless, skinless chicken breasts, cubed
1 Tbsp italian seasoning (or use 1 tsp each oregano, thyme & basil)
1 can(s) cream of chicken soup, condensed
1 pkg onion soup mix
11 oz mushroom pieces, undrained
8 oz cream cheese, cubed
10 oz brussels sprouts, frozen
1 c dry white wine (i used chardonnay)
8 oz small shell pasta, uncooked
salt and pepper, to taste
cooking spray

Steps:

  • 1. Spray crock pot with cooking spray.
  • 2. Place all ingredients except for shell pasta in crock pot in order listed. Cook on low for 6.5 hours.
  • 3. Stir crock pot ingredients gently to blend all ingredients and make it creamy without breaking apart the Brussels sprouts. Stir in the small shell pasta, ensuring it is covered by liquid (add stock or water if necessary) by pushing it under the surface with a spoon. Cook on low for 30 minutes, until pasta is tender. Plate and enjoy!
  • 4. NOTE: For those of you who do not cook with wine, you can substitute 1/2 - 3/4 cup chicken broth and 2 - 3 Tbsp each lemon juice and balsamic vinegar.

Time 3h5m

Yield 3-4 serving(s)

Number Of Ingredients 4

1 1/2 lbs boneless skinless chicken breasts, fresh or frozen
1 (8 ounce) package cream cheese
1 (10 1/2 ounce) can condensed cream of mushroom soup
1 (1 ounce) package Italian salad dressing mix

Steps:

  • Place chicken in crock pot.
  • Cut cream cheese into cubes and distribute evenly over chicken.
  • In separate bowl, mix cream of mushroom soup, 1/2 can water, and Italian dressing mix until smooth.
  • Pour mixture over chicken and cream cheese in crock pot.
  • Set crock pot on high and let cook for 3 hours for fresh chicken or 4 hours for frozen chicken.
  • Serve with rice or egg noodles.
  • Enjoy!

Tips:

  • Choose the right chicken. For this recipe, boneless, skinless chicken breasts or thighs work best. If using chicken breasts, pound them to an even thickness so they cook evenly.
  • Don't overcrowd the slow cooker. If you have a lot of chicken and Brussels sprouts, cook them in batches or use a larger slow cooker. Overcrowding will prevent the food from cooking evenly.
  • Cook on low for best results. Cooking the chicken and Brussels sprouts on low for 6-8 hours will allow the flavors to develop and the chicken to become fall-off-the-bone tender.
  • Add the cream and cheese at the end. Stirring in the cream and cheese during the last 30 minutes of cooking will prevent them from curdling.
  • Serve immediately. This dish is best served hot over rice, mashed potatoes, or noodles.

Conclusion:

This Crock-Pot Creamy Chicken and Brussels Sprouts is an easy and delicious weeknight meal that the whole family will love. The chicken is tender and juicy, the Brussels sprouts are roasted to perfection, and the creamy sauce is flavorful and satisfying. With just a few simple ingredients and a little bit of time, you can have a delicious and healthy meal on the table that everyone will enjoy.
