2/3 cup shredded pepper jack cheese
2 Tbsp fresh cilantro, minced
2-3 chipotle peppers in adobo sauce, minced
2 tsp chili powder
1 tsp ground cumin
1 tsp kosher salt
1/2 tsp black pepper
1 large egg, lightly beaten
1/2 cup ketchup
2-3 Tbsp adobo sauce from the can of chipotle peppers
2 -3 Tbsp light brown sugar, packed

Steps:

  • Preheat oven to 350 F degrees. Add butter to small skillet and melt over MED heat. Add onion and cook 4-5 minutes, until soft and slightly browned on the edges, stirring occasionally. Add garlic and cook 1 minute. Set aside to cool slightly.
  • Add diced bread pieces and milk to a large mixing bowl and stir to combine. Add beef, cheese, cilantro, minced chipotle peppers, chili powder, cumin, salt, pepper, beaten egg and cooked onion mixture. Mix together until just combined.
  • Lightly spray a meatloaf pan with nonstick cooking spray. Pat meatloaf into prepared pan.

½ cup breadcrumbs ((I used Italian seasoned breadcrumbs, but any variety will work))
2 tablespoons Worcestershire sauce
1 ½ teaspoons salt
¾ teaspoon pepper
¼ teaspoon dried thyme
½ cup ketchup

  • Spray slow cooker with nonstick cooking spray.
  • Gently combine all ingredients (except ketchup) in a large bowl. Just be careful not to over-mix, or the meat will be tough. I like to use my hands for this!

2 lbs ground meat (I use 1 lb beef, 1 lb turkey)
2 -3 tablespoons italian seasoning
1 onion, grated (with juice)
1/4 cup carrot, grated
2 fresh garlic cloves, pressed
1/3 cup portabella mushroom, minced
2/3 cup frozen spinach
2 eggs
1/4 cup ketchup
1/3 cup sour cream
1 tablespoon sriracha sauce (Asian hot chile sauce)
1 cup cracker, crushed (I use Cheez-its and Triscuits)
1/3 cup Italian breadcrumbs
1/4 cup cheese, shredded (I use Sargento's Shredded Chipotle, yum!)
1/4 cup tomato sauce
1 chipotle pepper, pulverized

Steps:

  • Mix first 7 ingredients in a bowl. Be careful not to overwork, otherwise your loaf will be tough (hint for any meatloaf!).
  • In another bowl, beat eggs with ketchup, sour cream and sriracha sauce. Add to meat mixture.
  • Stir in cracker/breadcrumbs and cheese until just mixed inches.
  • Shape into two loaves, place in crock pot.
  • Mix tomato sauce and chipotle pepper, spread on top of loaf.
  • Cook on med-low for 5 hours or until done.
  • If desired, sprinkle some shredded Chipotle cheese on top of loaf about 10 mins before serving. You can also make a gravy out of the "juice" that results in bottom of pan by adding some beef broth and thickening with cornstarch.

1 cup whole milk
2 large eggs (lightly beaten)
2 Tablespoons light brown sugar (packed)
1 Tablespoon ketchup
1 Tablespoon bbq sauce
1 Tablespoon Worcestershire sauce
1 Tablespoon garlic powder
1 teaspoon kosher salt
½ teaspoon black pepper
1 cup plain panko breadcrumbs
2 pounds ground beef ((85/15))
½ cup ketchup
½ cup bbq sauce
¼ cup light brown sugar (packed)
fresh chopped parsley for garnish (optional)

Steps:

  • Line the crock pot with a large piece of heavy-duty foil, spray with cooking spray, and set aside.
  • In a large bowl add the grated onion, milk, eggs, brown sugar, ketchup, bbq sauce, Worcestershire sauce, garlic powder, salt, and pepper.
  • Whisk this mixture until fully combined.
  • Add in the breadcrumbs. Stir in the breadcrumbs until mixed well.
  • Next, add the ground beef.
  • Using your hands, mix everything together until well combined but do not overmix.
  • Add the mixture to the aluminum foil in the slow cooker, and form it into a long oval shape, set aside.
  • In a small bowl add the ketchup, bbq sauce, and brown sugar. Whisk this mixture together to make the glaze.
  • Brush half of the glaze on top of the meatloaf. Cook on low for 6 hours or until the internal temperature reaches at least 165°F.
  • Take the meatloaf out of the crockpot using the foil to help lift it out. Place on a sheet tray and brush the remaining glaze on top.

1 cup shredded cheddar cheese
1 small onion, finely chopped
2 tablespoons minced green peppers
1/4 cup chili sauce

Steps:

  • Crush the crackers with a rolling pin or blender.

1 (1 ounce) envelope dry onion soup mix
