Time 6h10m

Yield 4 serving(s)

Number Of Ingredients 7

4 (6 ounce) boneless skinless chicken breasts
2 teaspoons dried basil
1/4 teaspoon salt, divided
1/4 teaspoon pepper, divided
1 cup diced yellow bell pepper
1 (16 ounce) can navy beans, rinsed and drained
1 (14 ounce) can pasta-style chunky tomatoes, undrained

Steps:

  • Place chicken in slow cooker and sprinkle with basil, salt and pepper.
  • Pour tomatoes and beans over chicken and sprinkle with the yellow peppers.
  • Cover with lid and cook on high 1 hour and low 5 hours.
  • Spoon bean mixture into each of 4 shallow bowls.
  • Top each with 1 breast and 3/4 cup bean mixture.

Tips:

  • Use high-quality ingredients: Fresh, flavorful ingredients will result in a more delicious dish. Look for organic, free-range chicken, ripe vegetables, and fragrant herbs.
  • Don't overcrowd the slow cooker: Leave enough space between the chicken and vegetables so that they can cook evenly. If the slow cooker is too crowded, the food will steam instead of roast.
  • Cook on low for best results: Slow cooking on low heat allows the flavors to develop and the chicken to become fall-off-the-bone tender. If you're short on time, you can cook on high for 4-6 hours, but the meat may be less tender.
  • Don't lift the lid during cooking: Every time you lift the lid of the slow cooker, heat escapes and the cooking time is extended. Only lift the lid to add ingredients or check for doneness.
  • Let the dish rest before serving: Once the chicken is cooked, let it rest for 10-15 minutes before serving. This allows the juices to redistribute throughout the meat, resulting in a more tender and flavorful dish.

Conclusion:

This Crock Pot Chicken Provencal Supper is an easy and delicious one-pot meal that's perfect for a weeknight dinner. The chicken is tender and flavorful, and the vegetables are roasted to perfection. With a few simple ingredients and a little bit of time, you can have a delicious and healthy meal that the whole family will love.
